The intro to our 10th Anniversary rewind - and perhaps one of our most formative brews - is a botanical saison dubbed “of Love & Regret”. The first batch was produced in the small town of Beerzel, Belgium in 2010.
Meant to evoke the delicate aromas of Spring, this beer was a tribute to the changing nature of the seasons, during what was a rather
transformative season in Brian’s own life. This was the first beer we crafted overseas - the experience of which would shape the model we would follow for years to come - eventually leading to the production of Stillwater beers & collaborations in over 30 countries.
Soft malts, herbaceous hops, & fragrant botanicals come together in an elegant ode to the bittersweet passage of time.

Bottle. Creamy White good mostly lasting head. Dark yellow colour. Moderate malty and hoppy and yeasty aroma. Moderate bitter nice flavor. Some brett notes. Long moderate bitter finish. Creamy palate.

Light brown colour. Aroma and flavour are dominated by bay leaf and other wild herbs. Maybe some ginger and orange too. Sugary sweet. Awful.

A brown beer, a head is big and beige. Aroma is strongly flowery and aromatic, lavender and chamomile, some lemon. Taste has similar flower profile than in the aroma, lavender and chamomile, some spices. Medium bodied, strong carbonation. Strong flowers, not bad but still this is a curiosity beer.

750ml (unlabelled) bottle [hasn’t this version been brewed at Hof Ten Dormaal? - I might be mistaken]. Clear, copper colour with average, frothy, half-way lasting, minimally lacing, off-white head. Wowhowa! Fantastic fresh, fruity and herbal aroma, notes of different types of tea, hibiscus, rooibos, rose hip, mallow, chamomile, lavender, a touch of thyme and dandelion, some citrus. Taste delivers the same plethora of flavours with different emphasis, is less fruity overall, dry and minimally soapy, additional cinnamon and dandelion note in the finish. Very nice composition, close to really spectacular.

Keg at spitfire. Pours hazy pale amber orange, nose is herbal, funky, taste is dry, light funk, herbal finish.

Keg at the Earl of Essex, 10/12/14. Lightly hazed golden with a decent off white covering. Nose is floral, citric peel, spice, woody, light smoke, honeysuckle. Taste comprises bitter citric peel, tangerine, apricot jam, spice, sweet’n’sour, floral notes. Medium bodied, fine carbonation, semi drying close. Ok floral me up SHV, solid for style.

330 ml. bottle from Bierhalle Deconinck. Brewed @ ’t Hofbrouwerijke is seems going by the label. Murky brown peach orange with small but solid off-white head. Sweet botanical smell, lavender, flowers, dandelions, sweet honey, very unique, flowers nose, perfume. Taste is sweet honey, dandelions, flowers, faint lavender, herbal tea in a good way, spice, huge perfume. Honey / malt / camomile tea body. Unique & highly delicious. Wonderful.
