Terf (Dutch dialect word meaning "tarwe" = wheat) is a beer that we brewed to support a group of young peasants from the neighboring region of Pajottenland. They strive towards a type of agriculture that respects both the land and the people. They accept to take risks and they fight to give the right credit to ancient cereals, wheat in particular. Some of them work with organic cultures, all of them follow farming methods that respect the environment as much as possible. The sale price of their cereals allows for a fair pay to the farmer. We decided to support their cause by brewing a beer that is sold within their network and values their products. The coordination of the project has been assured by our friends from 3 Fonteinen brewery in Lot.
Terf is a wheat beer, blonde and hazy, 5% abv. Fresh cereal flavors prevail, wheat dominates with flavors of farmhouse bread. Herbal notes add freshness, while a slightly phenolic touch adds character. Its final is dry and bitter, but not excessively, and a floral touch completes the ensemble.
A simple, true beer, perfect to end the summer on a high note!

Bottle from Etre Gourmet. It pours hazy straw yellow with a gigantic thick, dense white head. Took a long time to pour even when I did so very carefully. The aroma is cracker, doughy, wheat bread, cereal, straw, some spice and earth. The taste is crisp, dry, quite bitter, grainy, wheat, grassy, cereal, straw, floral, quite soapy, doughy white bread and some harshness. Finish is bitter and lingering. Medium body and quite dense, foamy carbonation. A bit harsh and soapy tbh. A rare miss for de la senne imo.

Bottle @ Belgium. Pours hazy deep golden with a large frothy white head. Grass, citrus, slight barnyard and de la senne yeast. Quenching and dry. Very clean and elegant with a short finish.

Huge gusher - dès ouverture impressionné par la pression qui se dégage.
Dorée claire, col est très épais blanc et tenace. Une fois ouverte depuis qcq minutes le col redevient plus normal.
Arôme est assez 'fermier' avec un effet rappelant la basse-cour/grange, rétro de grains, fine note de levure, le tout clairement sur une approche houblonnée noble.
Palais est très sec avec un caractère grain de froment marqué. Je ne vois pas trop l'apport de 3F si ce n'est l'aspect cultivé au Pajottenland.
Le tout présente une approche noble, houblonné sur un côté terreux/herbal tea accentué par une caractère très sec de la levure et des grains. Pointe fruitée de baies vertes en retrait, fleurs séchées.

Bottle from Etregourmet. Hazy yellow colour, lots of creamy white foam. Lots of carbonation, a bit too much. Nose of wheat, citrus, hay and grass. Taste is bitter, grassy with light tart wheat notes. Dry and bitter. I would like it more with less carbonation.

Pours extremely foamy (no gusher, yet a lot of slush in the bottle neck, even though the bottle has stand upright for a few days prior ) . the foam fades fast, big bubbles and white in color. The beer itself is an unfiltered yellowblonde. Scent is mild, wheat - but not like a Belgian white in terms of spices etc. More straight forward. Taste is bitter, fairly intensely so. typical DLS dry, hoppy bite. Mild yeastyness - not troublesome. However, it's very highly carbonated ( overcarbonated to me) and leaves a bitter sting in the finish that I don't mind, but I can understand the negative feedback I heard about this (by non-bitter fans).. certainly drinkable and refreshing, shame for the overcarbonation and the high price (bought at OBD, perhaps it's cheaper in retail ? )

Cloudy blond yellow beer, big creamy towering merengue head, stable, adhesive, leaving a nice lacing in the glass. Aroma: very yeasty, some banana, malty, lots of grains, bit metallic. MF: very lively carbon, medium body. Taste: malty, grains, hay, cow fodder, grains, bitter, some banana peel, pretty bitter. Aftertaste: pretty bitter, some diacetyl, fruity touch, bit funky, very bitter, green herbs, grassy, pretty metallic.

Bottle shared at 3F OBD. Hazy light yellow with solid white head. Cloves, wheat, soft yeast, aromatic spices, grassy, creamy grains, bready, allspice, spicy hops, flowery. Medium sweet and solid medium bitter. Medium bodied. Lovely.
