There's an aura of mystery that occurs when we close the doors to our barrel room. No one can say for sure what happens each night but it's obvious there are spirits [ghosts if you will] working their magic. We're not sure how many inhabit our oak forest. At present there are five large foeders and more than 1200 oak barrels for them to hide in, around, and behind.
To this day, no one has managed to see one during the day but our night time brewers hear whispers and the sensation of unnerving drafts of wind arriving out of thin air. It's as if the ghosts want to be seen or at a minimum acknowledged. After 11 years, we felt it was time to give them their due.

Bottle from De Bierliefhebber. Aroma is very fruity with guava, tart (tropical) fruits, some funk, stone fruits, apricot, oak, light malt. Flavour is tart and medium sour with a dry finish. Medium body. Tropical and sour, good balance, great beer.

Bottle, 375 ml shared with Max and Miro B. Hazy orange, white head. Juicy, funky, barrel, tropical, guava. Medium sourness. Very refreshing and easy drinkable.

Guava-flavoured barrel sour from this iconic American craft brewery – from the familiar kind of stubby bottles with arty labels, bought at BeerFreakChick (and shared there during a tasting event). Snow white, medium thick, gradually opening and dissolving head, initially clear deep and warm ‘old gold’ robe, misty with sediment. Aroma of indeed fresh and actual guava fruit, lime juice, green apple, sorrel leaves, quite pronounced vanilla (from the oak wood but also actual vanilla for some or other reason), pitaya, peanuts, pickled lemons, candied rhubarb, raw pineapple. Crisp, sour onset, very lime-like with hints of green apple and raw rhubarb to it as well, quite sharp and acidic but still remaining remarkably elegant; finely tingling carbonation adding a refreshing crystalline effect, supple and smooth, full, tad vinous body. Clean white-bready and very subtly nutty malt core underneath lots of refreshing fruity sourness, but also a vague hint of sweetness from the actual fruit used here; lots of retronasal oaky vanilla, but the actual (tannic) woodiness remains subtle – and subordinate to the glory of the guava fruit. Radiant, intense, brightly coloured, classy American sour ale – one of high profile, worth every penny.

Pours clear golden with a white head. Aroma is tart with notes of citrus, malt, red berries, funk and a hint of vinegar. Taste is light sweet and medium sour with a long slightly dry, tart, berry and funky finish. Body is medium, texture is thin to oily, carbonation is soft.

Flaska från SB. Något mörkare guldfärgad, smått disig med vit krona. Rejält med tryck i syran. Guavan inte superskarp, drar nästan mer åt passionsfrukt. Mycket fat, fin syrlighet. Mycket gott.

Gulbrun klar med offwhite skum. Lukter svovel, bæreddik og stenfrukt. Middels fylde. Sur. Sure bær, rognebær, krutt og eddik. Lang. Vinøs.

Bottle. (thanks SirLimpsalot) Hazy golden/orange with a small head. Tart with citrus, funk, some oak and guava. A refreshing one.
Balanced oaky guava.
