HOUTGERIJPTE WILDE GOSE MET ABSINTALSEM EN ENGELWORTEL
Dat geschiedenis helemaal niet stoffig is bewijst Kwiek, onze collab met DOK Brewing Company. Kwiek is een friszure gose, een bierstijl met tarwe die oorspronkelijk uit Goslar en Leipzig komt.

Door ons te verdiepen in hoe het vroeger werd gemaakt ontdekten we dat er vaak absint in zat, een kruid dat wij zelf graag in onze bieren gebruiken. Voor deze collab hebben we daarom besloten om deze traditie voort te zetten, met absintalsem die afkomstig is van de historische Ommuurde Tuin. Moderne goses worden op smaak gebracht met korianderzaad, dat wij hebben vervangen door zaad van de engelwortel, een inheemse plant die frisse, kruidige toetsen geeft. De frisse zurigheid en lange, bittere afdronk van Kwiek zijn in balans gebracht met een dosis zout, dat een kenmerkend ingrediënt is van de gose. Voor ons is dit de eerste keer dat we zout in ons bier verwerken, dus kunnen we toch nog zeggen dat Kwiek iets nieuws biedt.

From bottle at Mout Bierfestival Nijmegen 2020. Dry and herbal with a mild bitterness. Citrus, lemon, bit funky. Medium body. Nice and dry, very good.

[2/18/23] Draught at Dok Brewing in Gent. Cloudy yellow. Lacto, citrus, tart, a bit salty.

On tap at Brewdog - Brussels, pours a cloudy blonde with a small white head. Aroma is salty and herbal, with lots of strange herbal spiciness, salt, saline and lacto. Flavour is dry and salty, with light oak, salt, and herbal notes. I don't really know what the absinthe and angelica are doing here other than giving it a strange herbal character. Weird.

Bottle. Funky, wheaty, herbal. A bit of citrus. Quite nice, I don’t get much salt which is totally fine with me. Pretty similar to batch 1 I think.

9/II/23 - on tap @ DOK Brewing Company (Gent), BB: n/a (2023-139)

Slightly cloudy light yellow beer, small creamy white head, pretty stable, a bit adhesive, leaving no lacing in the glass. Aroma: a little fruity, funky, lemony, acidic touch, a bit floral, ok. MF: soft carbon, medium to light body. Taste: pretty acidic up front, lemon juice, soft bitterness, a bit herbal, little dirty, urinals (well, I guess that’s more retro nasal smell than taste :p ), very funky. Aftertaste: bitter touch, some tannins, fruity touch, herbal notes, ok.

Bottle shared at the Columbus tasting 31/08/2022. Many thanks to Kenny for this oen. A hazed dull orange coloured pour with a loose greyish white head. Aroam is dry spicy onion, white grape, zesty lemon, grassy funk. Flavour is composed of semi sweet, lemon verbena, tart zesty lemon rind, green citrus. Palate is semi sweet, floury, prickly tart, highish carbonation. . Quite fun.

Bottle shared in London. Thanks to Tipple. Pours unclear gold with a frothy, pure white head. Lightly sweet with zesty lemon, low acidity, lemony candy. Light to medium bodied with spritzy carbonation. Lightly drying finish, more citric tang, lemony notes, some zest. Nice and drinkable.

Level 6 bottleshare. Thanks to me. Hazy gold beer, small cream colour head. Palate is airy and semi dry, reasonable fine carbonation. Fluffy malts, a light creamy sweetness. Nice mildly tart citrus with a nicely judged level of salinity. Mild wormwood licorice. Angelica mild floral fruits playing 2nd fiddle. Light and semi dry finish. Entertaining gose.
