Dat geschiedenis helemaal niet stoffig is bewijst Kwiek, onze collab met DOK Brewing Company. Kwiek is een friszure gose, een bierstijl met tarwe die oorspronkelijk uit Goslar en Leipzig komt.
Door ons te verdiepen in hoe het vroeger werd gemaakt ontdekten we dat er vaak absint in zat, een kruid dat wij zelf graag in onze bieren gebruiken. Voor deze collab hebben we daarom besloten om deze traditie voort te zetten, met absintalsem die afkomstig is van de historische Ommuurde Tuin. Moderne goses worden op smaak gebracht met korianderzaad, dat wij hebben vervangen door zaad van de engelwortel, een inheemse plant die frisse, kruidige toetsen geeft. De frisse zurigheid en lange, bittere afdronk van Kwiek zijn in balans gebracht met een dosis zout, dat een kenmerkend ingrediënt is van de gose. Voor ons is dit de eerste keer dat we zout in ons bier verwerken, dus kunnen we toch nog zeggen dat Kwiek iets nieuws biedt.

Pours slightly unclear blonde. Scent is mildly malty, very unintense. Taste is tart, doughy, honey, mildly spiced. Green and herbal. mild bitterness. Nice. Spices get more to the front as the beer opens up (warms up). Didn't really get the salt myself.

4 August 2021. At Dok Brewing Company. Shared with the lovely Anke! Clear pale golden, thin, off-white head. Aroma of rhubarb, vinegar, lemon peel, tart apple, old apricot, sauerkraut, cucumber. Taste has sour cucumber, rhubarb & sauerkraut, lemony-acidic with soft vinegar too in a yeasty, sourdough-like malty profile. Tart finish, acidic, low in herbal hoppiness, lingering funky sauerkraut again along old fruit, vinegar & woody tannins. Medium body, slick texture, average carbonation. Very rich Gose, taken to the next level.

Slightly hazy golden. Citric and lemon, funky, slight acidic, with a crisp and dry finish. Fruity, mellow cava. Nice!

Hazy yellow-golden beer. Head reduced to rim in seconds. Very spicy and mineral nose with wormwood and other spices; Sourish, and herbal, with a particular flavour that reminds me especially of chervil, or watercress with just a dash of lemon. Again mineral, silt. Delicate lemon flavour, celeri. Very sparkling, light body, bit slick, refreshing. Yet another little gem from Nevel.

Bottle at home, golden orange beer, small to no head. Aroma is tart, wheat, herbal, wild yeast and some oak. Taste is the same herbal, tart, wood, herbal aftertaste, nice.

Taster at home courtesy of Sander, big thanks. orange hazy color, small white head. smells funky, citric, earthy, cheesy, spices, peppery, herbal, bit leathery. very nice smell. full body, soft carbonation. tastes citric, grassy, earthy, peppery, spices, herbal. finishes dry and medium sour with notes of grass, peppery and earthy notes. pretty nice one, loved the smell, taste is nice too but not totally convincing.

Collab of two beloved breweries: wild ale specialist Nevel in Nijmegen (Netherlands) and Dok Brewing Company in Ghent (Belgium), presenting this ambitious barreled Gose spiced with angelica and absinthe wormwood - a combination I haven't seen before, even barrel aged Gose sounds unusual (and, frankly, a bit 'unnatural') to me... Anyway, 75 cl bottle from Geers, shared with my girlfriend. Mousy, off-white, irregular, breaking head, eventually dissolving all but completely, over a hazy straw blonde beer with golden hue. Aroma of sourdough, the water from a jar of pickled gherkins, pumice, indeed dried wormwood, anise (which in this case represents the angelica), green apple, sour wild berries, a strong presence of old wet wood, sawdust even, dried camomile, moldy lemons. Fruity, elegantly tart onset, green apple, lots of cucumber, hints of lime and raw rhubarb with a very light, wakame-like salty touch on the edges; soft carb, smooth body. Dry white-bready malt core with gentle lactic sourness throughout, carrying the cucumber aspect onwards to a 'green'-fruity finish where the wood pops up as a tannic, rustic background structure and the herbs fill in the gaps: bitter, spicy, quinine-ish wormwood mingled with aromatic, anise-like angelica, topped with a citric accent and underlying chalkiness typical for Berliner Weisses and Goses in general. Lovely floral and weedy character but remaining focused and streamlined, very much a Nevel ale indeed, as a 'freestyle' sour that draws sheer happiness from experimenting with these herbs. Easily drinkable, 'happy', refreshing, elegant beer, yet with enough complexity to hold the drinker's attention till the last drop. I absolutely loved it.
