Dark Wild Ale. Alc 5.8% Vol
Our dark wild ale in its purist form. Blend #1 of this beer is made up of 2 barrels with an average age of 8 months in oak, half of the blend was fermented with lab cultures and the other half with our wild house culture of yeast and bacteria.
This beer smells like toasted danish rye bread upfront with a hint of powdered jam doughnut. The flavour has great length and lingers on the palate for ages. It starts with firm citric acid up front that mellows into clementine and orange before finishing with dark chocolate and toasted almond.

Had blend #2 last time. Not sure the difference but still excellent.

Süffiger, stark säuerlicher Beginn. Spritzig, trockener Hintergrund, geringe Karbonisierung. Spritzig, weich würzig, langer Nachhall. 9/10/9/9/7/9
33cl bottle. A hazy dark amber beer with a beige lacing. Aroma of grapes, dark fruits, caramel, wood. Taste of sour red berries, grapes wood caramelized malt.

Dark brown and clear with quick fading head. Aroma has toasted bready notes along with some slightly vinous woody notes akin to a Rodenbach or Duchesse. Flavour has a similar sharp and woody note with deeper forest fruit notes too.

Bottle. Dark brown color, vinous aroma with caramel and a hint of balsamic vinegar. Sour flavor with berries, caramel and lemon. Dry and well balanced,
