PARAGON 2019
Barley Wine Ale, Vintage 2019 aged in Bourbon barrels for over a year

This years vintage is a blend of time. We had a few lingering barrels from the fall of 2017. To that we added a few more from early 2019 and topped it off with some from the fall of 2019. All of the barrels we used were bourbon. The bulk of which were previously used for Heavin Hill, with some Angel’s Envy and even a couple Wild Turkey in there as well. But this years version isnt really about a big bourbon character, it’s more focused on the subtle bourbon flavors that are inherent to this beer. After the sweet punch right away subsides you will get flavours such as Dried figs, raisins, and vanilla. Then the malt gives Paragon it’s caramel, toffee, and chocolate flavours that rounds out with mild sweetness, bringing it full circle.

The beer has a slight viscous texture which coats your mouth in a flavor explosion of all the forementioned tastes, while doing it’s best to hide the alcohol.

Drinking reccomendations are to serve it around 7-8 °C in a snifting glass and sip it slowly allowing to warm as you go. Your mouth will discover new flavors as it does. For us this beer represents our passion for the old style and the life of a brewers work in a bottle. Please enjoy with sofistication.

0,33 litre Bottle from Vinmonopolet Lillehammer. Dark brown with a little brown head. Malts, raisins, bourbon, sweetness, Very well balanced, and Way better than The 2018 vintage.

0,33 l bottle from Goblet Beer Store, Zagreb, shared with Ogi at the Mini Tasting on February 15th 2021. Deep dark brown, small beige head. Complex malty profile, fruit jam, dried fruit, cherry, cranberries, chocolate, cocoa, hints of orange zest, syrup or molasses, caramel. Sweet, dried fruit flavour, sweet bread, brandy, caramel, cocoa. Very sticky, waxy, strong but soft, light finish. Very nice, properly done, quite sweet, quite strong.

Minus 1 point for the silly, irritating and hampering wax. Head reduced to rim over deep brown beer with some orange highlights. Bourbon², intense chocolate, tobacco, alcohol & fusels. Chocolate, melanoidins, some bitterness, woody, oak, vanilla, Bourbon and brandy. Obviously very well-bodied, viscous, filthily rich, alcoholbomb. Very rich and rewarding, but not quite in the top of its style.

Bottle from Etregourmet. Sweet, boozy, lots of vanilla, marzipan, dried fruit, toffee, sugar and bourbon finish. Very nice sipper.

330ml bottle. Sweet, heavy and slightly syrupy with loads of caramel, toffee, fudge, some bourbon, vanilla, oak and earthiness, hints of plum and sherry. Quite subtle and refined, not as over the top or in your face with its complex notes. Soft and balanced super slow sipper. Bottled 330ml. -from Goblet Zagreb, shared with hrabren. Brown coloured, small beige head, dried fruits caramel and light chocolate in the nose. No trace of alcohol. Heavy sweet but surprisingly not so dominant taste with notes of dried fruits, caramel and some nuts. Hidden alcohol as well.

33cl bottle. A very dark brown beer with a beige lacing. Aroma of intense sweet and strong dark malt, caramel, chocolate, Bourbon. Taste of dark roasted malt, Bourbon, vanilla, coffee, wood. Nice!

Bottle @ CloudwaterFriendsandfamIamLennyKreunion. With special guest The chocolate boy wondah aka Chocolate Joseph. Pours ruby amber brown with bubbles on top. Big bourbon caramel slash vanilla nose. Beneath dark fruit, tobacco, fudge and more bourbon. Oily and vinous. Slight warmth. Lovely sipper.

Bottle sample at a tasting at Yana's place. Brown. Malt, caramel, bourbon, vanilla, lots of soy sauce, sweet, a bit umami, full-bodied, thick. Very good.
