Barley Wine Ale, Vintage 2019 aged in Bourbon barrels for over a year
This years vintage is a blend of time. We had a few lingering barrels from the fall of 2017. To that we added a few more from early 2019 and topped it off with some from the fall of 2019. All of the barrels we used were bourbon. The bulk of which were previously used for Heavin Hill, with some Angel’s Envy and even a couple Wild Turkey in there as well. But this years version isnt really about a big bourbon character, it’s more focused on the subtle bourbon flavors that are inherent to this beer. After the sweet punch right away subsides you will get flavours such as Dried figs, raisins, and vanilla. Then the malt gives Paragon it’s caramel, toffee, and chocolate flavours that rounds out with mild sweetness, bringing it full circle.
The beer has a slight viscous texture which coats your mouth in a flavor explosion of all the forementioned tastes, while doing it’s best to hide the alcohol.
Drinking reccomendations are to serve it around 7-8 °C in a snifting glass and sip it slowly allowing to warm as you go. Your mouth will discover new flavors as it does. For us this beer represents our passion for the old style and the life of a brewers work in a bottle. Please enjoy with sofistication.

Dark brown with a ring tan head. Aroma of bourbon, oak, chocolate, overripe dark fruits, butterscotch, toffee and vanilla. Flavour is heavy sweet. Full bodied with an oily texture, alcohol warmth in the finish and soft carbonation.

Bottle shared thanks to kermis. Very dark brown with small beige head. Massive bourbon, and I mean massive. Fudge, sweet malts, boozy, vanilla, condensed hops, dried plums, massive briwn sugar. Very very sweet, also quite bitter. Full bodied, soft fizzy carbonation. Really good.

Pours dark brown with a beige head. Aroma has notes of malt, dried fruits, caramel, vanilla and oak. Taste is medium to heavy sweet and light bitter with a long sweet, dried fruity, caramel and vanilla finish. Body is full, texture is oily, carbonation is soft to flat.

Bottle, 330 ml at Miro b's Grande tasting. Shared with him, Max and JFK10000. Dark brown with beige head. Chocolate, caramel, cocoa, barrel, nuts, nice bourbon note, dried fruit, warming, sweet, medium+ bodied. Not so thick, but good drinkability for the abv. Some bitterness in finish. Medium bodied.

Taster at home courtesy of Sander, big thanks. black color, small tan head. smells bourbon, vanilla, molasses, nutty, lightly roasty. very nice smell. full body, no carbonation. tastes of bourbon, vanilla, fudgy, sponge cake, molasses, medium sweet, caramel, sweetened herbs, light cough sirup, oak, pronounced figs and raisin notes, toffee. finishes medium sweet with notes of sweet toffee, figs, bourbon and sweetened herbs. wow, this is super expressive, a lot going on here. I like how the flavors shift once this had some time to breath. quite sweet but also super fun. would be super interesting to try this after a year or two again.

APPEARANCE: deep brown color, cola, chestnut and red-ish hues under the light, small ring of beige colored tiny bubbles on the side of the glass
AROMA: deep and rich barely wine aromatics, not overly sweet on the nose; toasted sugars, melting brown sugar, dark caramel, clearly noticeable marzipan and nutt oils, dried herbs, dried fruits like raisins and figs, impressions of melting sweet chocolate fudge, light bourbon barrel character in the background, notes of wood, spicy bourbon, not much of vanilla to be honest, hints of smoke and umami vibe; alcohol is remarkably well hidden for 13.5% abv, just sutble spicy note, no booze or heat
TASTE: smooth and soft carbonation helps to spread the flavors, first two sipps really oily, coating and chewy, then slightly thins out, glides nicely down, medium full to full body (not overly full); massive sweet onset of melting and toasted sugars but again not overly cloying at least not for my palate, brown sugar and syrup for days, liquid raisins and figs, a lot of residual sweetness at the finish with light spicy bourbon note, savory and mineral notes in the aftertaste along with soft tannic bitterness from the barrels; less nutty on the flavors as suggested on the aroma; very mild plum brandy note, subtle toasted coconut chips; alcohol is masterfully hidden, glides down with ease; moderate dryness with lingering bourbon, hints of smoke and minerals
OVERALL: it delivers what you expect from barley wine with light bourbon character; layers of sweetness are nicely cut by spicy and slightly peppery bourbon; dangerously drinkable and enjoyable sipper; barrel character is nicely integrated but I do miss a bit more or fullness for such a big beer; nonetheless world class BA barley wine;

Dark brown, close to black, tiniest cream brown head. Smells very malty, dried fruit, light bourbon, oak. Nice thickness, smooth, quite warming. Taste is sweet, plenty of bourbon, lots of dried fruit, raisins. Some caramelly chocolateyness. Delicious.
