Phi is a pale strong beer, skillfully balanced between sweet and sour due to the addition of 40% of wheat to the grain bill. Phi is part of the “Omega – Phi – Sigma” trilogy which matures in stainless steel tanks where the Morpheus yeast imparts a refreshing sourness. Phi is a good stepping stone for those who want to familiarize themselves with our Flemish Sour Ales.

Thought this might go well with bolognese. Amber, clear, no head to speak of. Sweet, sour, fruity, some red apples and a hint of citrus. Very nice, and actually does go well with ragu.

330ml bottle Sophie's Beer Store. Cloudy amber with off-white froth atop. Aroma is fruity, some mild mixed ferm, not jumping out as rhubarb. Taste is wonderfully sharp with a bristling tangy acidity, some lovely mellowed rhubarb fruit, not too vivid and melds nicely with the yeasty character, some sharp lemon notes in the background. Very good but expected a bit more rhubarb definition.

Really good wild sour, with that typical Flemish oak vibe that Alvinne excels at. Only trouble is that 330mL is way too small to split - I need a litre of this!

Bottled 330ml (Beergium) Dark orange-amber colour, small off-white head. Aroma is funky, citric, earthy sour with fruity notes. Not really pleasant. Medium to full-bodied. Apricot, citrus, sourness, salty, contaminated beer tartness. Well, at least hides its ABV. I am not a big fan of this kind of sour mess.
