Phi is a pale strong beer, skillfully balanced between sweet and sour due to the addition of 40% of wheat to the grain bill. Phi is part of the “Omega – Phi – Sigma” trilogy which matures in stainless steel tanks where the Morpheus yeast imparts a refreshing sourness. Phi is a good stepping stone for those who want to familiarize themselves with our Flemish Sour Ales.

Tap. Amber color with small white head. Vinous aroma with funk, bayrnard. Taste, Nice sourness with wine, wood, honey notes, salt. Nice.

Tap at unorthodox. Intense sourness, rather lactic character, feels pretty clean, even if a bit cheesy. Lots of fruity character, red fruits, esters. Med-thin body, moderate carbonation. Quite good, also true to style. Rather slow drinking, but very good.

Bottle. Bit skunky smell again, lively spritziness, tastes different, like toast, full bodied, light creaminess towards end. Very dry again.

Bottle. pale amber color. Cloudy, no head. Citrus, candied fruit and chloride in the aroma. Sour citrus flavor with some candied fruit and soft yeasty notes. Hints of banana sweets. Not flawless but very nice to drink.

Taster courtesy of Sander, big thanks. amber hazy color, small white head. smells earthy, spices, some funk, bit rubbery, lactic, earthy, nice smell. full body, light carbonation, slick mouthfeel. tastes of vinegar, earthy, nutty, marzipan, peppery, lactic, some sweetness, ripe fruits, light berries, peppery, spices. finishes lightly sweet and lightly sour with notes of ripe fruits, berry notes and some marzipan. pretty nice one, a bit on the heavy side (with the sweetness), but overall quite good.

Review based on the BJCP2015 guidelines (style 23B-adapted). Bottle 33 cl - Batch 1037 (BBF: OKT 2021). AROMA: medium-high plastic-like aroma (wrapping film), followed by medium sourness background. APPEARANCE: light amber colour and hazy. medium-low beige head with good retention. TASTE: similar to the aroma with medium-high plastic like notes (wrapping film) with touches of medicinal. slightly sweet malt background. medium-low sourness and bitterness. PALATE: medium-low body with medium-low carbonation. OVERALL: a belgian style sour with very odd notes.

18 January 2019. At Dok Brewing Company, Ghent. Cheers to Anke & Pieter! Pours hazy orange with a lasting, very thin, frothy, off-white head. Aroma of sourdough, apple sauce, lime, wet hay, grass, straw, leather, wet wood, green apple, mandarin peel, green banana. Taste is medium funky sour, hay & straw mixed with yeasty sourdough, fruity accent of apple & unripe orange, rendering it faintly sweet too, a bit banana-like even; bitter touches of wood pop up on top of a bready malty base that is vaguely dusty & cellar-like. Dryish, tart, bit grassy hoppy finish, lingering 'funk' & hay, slightest touch of warming sherry alcohol. Medium body, oily texture, soft carbonation. Balanced, smooth.
