Phi is a pale strong beer, skillfully balanced between sweet and sour due to the addition of 40% of wheat to the grain bill. Phi is part of the “Omega – Phi – Sigma” trilogy which matures in stainless steel tanks where the Morpheus yeast imparts a refreshing sourness. Phi is a good stepping stone for those who want to familiarize themselves with our Flemish Sour Ales.

(Keg at Stadin Panimobaari, 20160706) The beer poured amber and clear. Its head was medium sized and white. Aroma had fruitiness and vineousness. Palate was medium bodied and warming with medium carbonation. Flavours were fruitiness, vineousness, sweetness, honey, tartness and bitterness. Aftertaste was sweet, tart and bitter. A bit boozy tart brew.

Draught @ Fermentoren. Pours orange with a smooth head. Aroma of ripe fruits, tartish berries and oak. Taste is funky, sour and woody with some ripe fruits and yeast. Finish is yeasty, sourish and tart with some berries and earthiness. Heavy and sour.

On tap at The Hay Merchant. Pours a clear orange gold with medium frothy white head leaving spotty lacing. The aroma is funk, oak, apple skin. Thin mouth, tart apple, funk, oak, very nice.

From a 33 cl bottle. Pours a murky copper with a thick ecru head and lots of yeast at the bottom of the bottle. Aroma of peaches and white wine. First flavor is of big funky tart pit fruits. Lingering tart finish.

Clear golden and copper coloured body with a thinnish tan head, only about a half centimetre tall. Aroma of sour grapes, funk, yeast, gueuze, lemons and a hint of alcohol coupled with light malt as well. Light-bodied; Assertive effervescence; Strong sour quality up front of pure gueuze along with a sour grape and cherry flavour and finishing with a good deal of unfinished fruit-based sugars and a touch of syrup. Aftertaste is rich and sour, tart, funky, bright and definitely mouth-watering. Overall, this is MUCH better than expected - after reading these reviews, I was expecting this to be ho-hum, but it turned out to be a very nice beer - complex and sour, funky and bright, and definitely hiding about 5% of the abv - this feels like around 5%, so at 10%, i’m very surprised. Definitely worth sampling/buying if you can find it, and even though I only kept mine for a bit over a year, this would probably do well in the bottle; However, mine was just starting to bubble over as soon as the cap was removed, so maybe not 5+ years for this one. I sampled this stubby (it is from Belgium) 33 cL bottle purchased from Bier Tempel in Bruxelles, Belgium on 18-January-2015 for €3,00 sampled at home in Washington on 08-March-2016. Lot #726 (on cap), with ’MEI 2016’ listed as well (not sure what that means) Rating for the first Sample: 9,3,94,17 Second Sample: Super clear amber and copper coloured body with a bit of a glow towards the bottom, all with a nice, two to three centimetre tall off-white head. Aroma of sour funk, bread, yeast and a big dose of malts, along with a touch of alcohol warmth. Medium-bodied; Nice light spice flavour with some noticeable funk throughout along with a dose of grain and a little sour and fruity sweetness towards the end. Aftertaste shows the mellow funk along with some light sweetness and grain, but the sour, tart and assertive yeast qualities here come out and shine at the very end. Overall, a very nicely-balanced sour and pungent beer that has a great sour and vinegar-y kick at first but amazing malt and grain finish that makes this nice throughout and worthy of a nice review. I sampled this stubby 33 cL bottle purchased from Bier Tempel in Bruxelles, Belgium on 18-January-2015 puchased just a few days after my youngest daughter was born, sampled again right before my son was born, after running the USMC Marathon 2017 on 22-October-2017 for the seventh time. Rating for this sample: 8,3,8,4,16

Dark blond colour with thin egg white head. Aroma of sour scrumpy and wood. Flavour is sour, woody and dry. Elements of tart apple and light malt.

Bottle. Repugnant gusher that made a mess of my table and really pissed me off. Noose is sour apple, slight vinegar, honey, cloudy honey golden with a high head then lace. Flavors of honey, lemon, grapefruit, yogurt. Quite sweet. Full body, greeat balance.

Little bottle with the other two sign beers. Pours out a hazy copper topped with a small head. nose is tart funk some lemon wood and a little spice. Taste is more of the funky notes barnyard lemon and wood.
