14% - Saison du Fermier that was fermented in French Oak with our Saison/local microflora mixed culture and then racked to and aged in a light toast American Oak Foedre for 6 months.
31% - Saison du Fermier that was fermented in and aged in a heavy toast American Oak Foedre for 4 months with our Saison/local microflora mixed culture.
46% - Missouri Wild Blond Ale that was aged a French Oak Foedre that we have been pulling solera-style pieces from for the past 4 years. Higher acid (base for Fuzzy).
9% - Missouri Wild Ale that was aged in Missouri Oak Chardonnay barrels (59 gallon) for 3 years. Was aged to become a thread in this beer or a Pulling Nails blend.

Medium light amber golden color. Slightly hazy. Good horse blanket, cobwebs and hay in the nose. Decent tartness, with slight underlying sweetness, cobwebs, hay, leather and barnyard with a bit of apricot notes. More full body than usual, but balanced as hell. Lovely.

(750ml bottle shared @ Himmeriget, Copenhagen, Feb 9/19) Pours a nearly clear orangish-gold with a tight white head. Notes of quite tart pit fruit (apricot, yellow plum?), fresh lemon and juicy bright citrus, some grape, some sour apple hints, very oaky, hay, a bit of earth, musty Brett, not much cereal poking through. The relatively high acidity up front dries into the finish with a fair amount of barrel expression and hay/Brett, and the fruit fading out. Light to medium bodied with moderate effervescence. Puckering overall, but complex and interesting. I simply prefer a little less acidity in my tart saisons.

Bottle shared by Jack, thanks! Pours a clear gold with a white head that dissipates quickly to the edges. Aroma has sour fruits and lemon with earthy oak and a bit of menthol funk underlying. Flavor has sour tart fruits with oak, acid and a bit of funk underlying.

Bottle shared at Lucky Bamboo share. Pours a clearish straw gold with a finger of foam that lingers. Citrus forward nose with muscat, melon and grassy notes. Some wet hay and funk as it warms up. Apricot, muscat on the palate as well with lemon zest, citrus pith and a musty note. Oak and light hints of vanilla. Light pepper and grass towards the finish. Oak throughout. Bottle 750ml. @ Himmeriget, Aaboulevard 27, Copenhagen, Denmark 1960. [ As Side Project Merci Blend #3 ].Clear medium orange colour with a small, fizzy, fair lacing, mostly to fully diminishing, off-white head. Aroma is moderate malty, wheat, cookie, sweet malt, dough, moderate yeasty, funky, tart, citric. Flavor is moderate to heavy sweet and light acidic with a long duration, tart, funky, dough, dry, cookie, citrusy, wood - oak, citric. Body is medium, texture is oily to watery, carbonation is soft. Bottle thanks to Randy. Pours a hazy orange gold with small white head that lasts. The aroma is strong oak, apple skin, funk, lemon. Thin body, apple skin, light funk, nice tartness, enjoyed this.

Bottle, by way of a trade with B3shine. Cheers ninja. Hazed orange. Barely a head. Nose has cheese puffs. Wet oak. New leather. Melon. Crab apple. Sliced orange. Lots going on, here. Taste is sharp, tart, and acidic. Some sherbet sweetness on the lips. Dry as a bone, too. Crisp and acidic on the palate. Mellows easy. Sharp and juicy at the same time on the finish. Great stuff.

750mml. bottle. Kindly shared on the 09/05/2018 at "Himmeriget", Copenhagen. Hazy golden colour with a medium white head. Aroma of oak, brett, grape, straw and tropical fruits. Pretty funky aroma. Taste is sharp citrus fruits, oak, bett and some straw leading to a fruity sour and tart finish. Complex and enjoyable. Next one please!
