American Wild Ale

14% - Saison du Fermier that was fermented in French Oak with our Saison/local microflora mixed culture and then racked to and aged in a light toast American Oak Foedre for 6 months.

31% - Saison du Fermier that was fermented in and aged in a heavy toast American Oak Foedre for 4 months with our Saison/local microflora mixed culture.

46% - Missouri Wild Blond Ale that was aged a French Oak Foedre that we have been pulling solera-style pieces from for the past 4 years. Higher acid (base for Fuzzy).

9% - Missouri Wild Ale that was aged in Missouri Oak Chardonnay barrels (59 gallon) for 3 years. Was aged to become a thread in this beer or a Pulling Nails blend.

Bottle. Pours a hazy yellow color with a small white head. Has a fruity sour funky tart citrus aroma. Fruity sour tart woody citrus flavor. Has a fruity sour tart woody finish.

Bottled. A hazy golden beer with a white head. The aroma has notes of brettanomyces, lemons, straw, and funk. The flavor is lemons, brettanomyces, malt, and straw, leading to a tart finish.

Oats & apple cider vinegar. Hay, lemon & dry soil. Sour mouthfeel. Dry, tart & puckering mouth. Bit too sour for me.

Bottle@Jespers - Golden orange pour with white head. Medium sour fruity with some nice citrus and tropical notes, some grape, straw, medium body and carbonation, lovely light wooden accents. tart fruity finish. Gorgeous.

75 cl bottle. Pours hazy orange. Small white head. Aroma is fruity, ild herbal. Citric flavoured. Slight fruity. Brett and mild wineous. Sour. Wineous and fruity. Lingering dry and sourish finish.

Refrigerated 75 cl brown poured into a cup. Deep golden with small white head. Aroma is sour lemon, medium body, lower carbonation, and little lacing. Taste is tart lemon.

Bottle shared at Foeders' bottle share Oct. 2017. Hazy straw blonde color. Aroma's: sour, but soft, woody. Retronasal it's sourish, fruity, even a hint of sweetness. Flavor is moderate sour. Light bodied. Firm carbonation. Long finish, a bit dry/tart.

Bottle - White grape and some light barrel notes. Cloudy gold with a small white head. Nice sourness and a dry light funky finish.

750ml bottle at Matt's. Pours a hazy golden with a white head. Aroma is fruity and barrel notes. Similar taste with moderate to high acidity. Quite good, but I would prefer this to be less acid.

Hazy tan. Not much head. There's definitely a little bit of pedio on the nose, but with earthy, oaky and fresh leather aroma. The acidity is quite sharp - pretty acidic going down. Good complexity, with nice woody notes, maybe a bit vinous but that sharpness actually overwhelms this a bit, in my opinion cutting this down.
