Inspired by the Finnish brew known as Sahti, this is a variation of this ancient beverage. Brewed with Mecca Grade Vanor and rye malts, aged Cascade Hops from Goschie Farms, and our own yeast culture and house sour wort, Sahati gets resin and citrus notes from spruce branches harvested on the brewery property.

Bottle at share: pours brownish with fizzy head. Aroma is loads of spruce. Aroma is winy, loads of spruce. Taste is very acidic, spruce is not as well represented, but does make a nice appearance in the finish. Nice taste, but too acidic for me. Does not seem very similar to the real deal.

Bottle, at share, thanks to me. Pours red. Forest floor, spruce needles, walking through a forest, raspberry, pear, barrel, sharp. Medium body. Really good.

Piney, fruity nose. Sour and earthy, tart, a bit acidic. Pinewood, soil, a bit of funk, spruce needles. Not a sahti but excellent.

Sahati Bottle ordered from Ghost Whale, Putney. Aroma of fruit, berries, honey and spice with a vinous edge. Opaque amber. Thin creamy off-white head, retreats to the rim. Ooph. That was far tarter than I was expecting. Vinous and red berries. Real sharp edge to it. As I I acclimatise to it the honey sweetness comes through. Medium bodied. Slick. Flat carbonation. High astringent finish. Dry too. It's a sour. The Sahti inspiration seems to have been lost in translation, although with this tartness I'm using my sisu to get through it.

Hazy amber colour, tiny off-white head. Tart vinegar, berries, light herbal notes. Medium-bodied. Super tart, mouthpuckering, Berryish, earthy flavour. Absolutely nothing to do with Sahti. Could be quite good but it is just way too tart.

750ml bottle split at Arrogant Sour Festival held at Moor Brewery, Bristol 2019. Pours unclear orange amber with a tiny off white head. Aroma: sweet, sour, yeasty, juniper, spruce, herbal. Taste: moderate sweet, light tart, sour caramel, honey, spices, spruce, oak. Thin to medium body, very light carb, dry-ish earthy finish. Interesting & super complex

ABV: 9 - 11.0%. Hazy - murky medium orange colour with a small, fizzy, fair lacing, mostly diminishing, off-white head. Aroma is moderate to heavy yeasty, sugary yeast, sugary, juniper - spruce, tart, sour, sugar - honey, spruce. Flavor is moderate sweet and light acidic with a average to long duration, tart, sugary, phenol, juniper - spruce, sour, yeast, sugar - honey, dry, herbs. Body is medium, texture is oily to watery, carbonation is soft to flat. [20200111]

Cloudy copper with a small white head. Light berries and herbal notes with a nice sourness. Weird but good.

Taster on Weathered. Appearance: hazy deep golden with no head. Aroma: moderately sweet grapes, some wild character, some barrels and honey. Taste: along the same lines, pretty acidic, though. Overall: a bit too acidic for me, but it has a nice character.
