Sprong is a blend of wild ales, aged in oak puncheons (500L) for around 2.5 years, and a barrel fermented and aged saison type of beer. This saison was fermented in a large oak vessel and later transferred to oak barriques (225L) for another 6 months. Prior to blending the two parts together, the saison was slightly dryhopped for another 3 months. We've added a touch of Sicilian sage to the final blend to macerate a few days before bottling.

Pour at If It Ain't Dutch. Hazy amber. Thick foamy white head. Jazzy biig citrus and spice aroma. Flavourwise it is also big and tamg. Tart. Vinous. Sherbert. Berries. Thing. Watery..Soft-fizzy carbonation. Long dry astringent finish. Party sour (whatever that is).

Bottle shared at dutch bar bermondsey. A hazed golden orange coloured pour with a lasting fluffy white head. Aroma is spicy, ginger root, green berries. Flavour is composed of spicy ginger, galangal, gooseberry, earthy base grains, cola cubes, spicy. Palate is frothy airy carbonation, light tart, prickly. Very interesting.

Bottle, at the March 2025 DCBeer share. Poured a pretty looking, slightly hazy orange color with a small, wispy head. Aroma was big, dusty peaches, light tart apricots. Flavor was big, juicy tart, slightly acidic, vinous apricots. Nice tartness, quite tasty. Slightly sweet. Finish. Really good. Some fruity acidic character.

Pours clear bronze into a tulip. White head with excellent retention recedes to coat surface. Apricot, peach and tart aspirin funk aromas. Crisp with sweet meadow, oak and tart apricot upfront turning quickly to lactic aspirin before the lasting band aid finish.

Bottle at Foeders. Funk, citruses, light apple, woody notes, quite refrershing, zappy, vibrant. A touch spicy, mildly acidic. Not convinced about the category, in most senses it exceeds the saison style by far.

2024 vintage. Orange, medium hazy body, with a creamy head. Aroma of sage, citrus, stone fruits, some almond. Tastes similar. Medium mouthfeel, with a moderate carbonation. Finishes medium dry, medium bitter, citric, with sage, some wood. Really interesting stuff, the sage works very well. Lots of lovely fruit notes, drinks fresh and balanced. Score: 8 / 4 / 8 / 4 / 16

Bottle: Poured a golden/orangey color ale with a large white foamy head with good retention and some lacing. Aroma of tart notes with some vinous funky ester notes and light herbal notes. Taste is also a mix of tart notes with some oak and vinous notes also noticeable with a faint but discernible mix of sage. Body Is about average with good carbonation. Well balanced wild ale with plenty of complexity and a good level of drinkability.

Bottle, at share, thanks to Ryan. Pours amber orange. Funk, lemon, herbal, mint, fragrant, absinthe. Medium body, nice spritz. Very good.
