Sprong is a blend of wild ales, aged in oak puncheons (500L) for around 2.5 years, and a barrel fermented and aged saison type of beer. This saison was fermented in a large oak vessel and later transferred to oak barriques (225L) for another 6 months. Prior to blending the two parts together, the saison was slightly dryhopped for another 3 months. We've added a touch of Sicilian sage to the final blend to macerate a few days before bottling.

Bottle shared at pre-Kingsday tasting. Hazy orange color, virtually no head. Aroma is hmm...odd. Flavor is sourish, floral a bit but also a hint of cleaning agent or something. Hmm no not my favorite from TS.

Bottle. Tommie Sjef online, via Beer Gonzo now, at great expense, because Brexit. Hazed ginger gold. Slim, dense ring of white. Nose has suede. Mouldy wood. Plenty of herb, although to be honest I wouldn’t necessarily have got sage. It is very aromatic, in a soft leaf way. Some esters. Some stinky brett. Taste has a baked apple sweetness, turning a little dry, and a little vinous. Well drinkable, with clean, manageable acidity. Fine carbonation. Tart and a little dry on the finish. Complex and easy drinking at the same time.
