Bottle, 2018, bottled january 2019. 6%. Blend of 1 and 2 year old Fantome Saison with 1 and 2 year old lambic and 2 varietals of fresh apricots. Color: Hazy orange, like apricots, white and yeasty dense brown head that seems to last forever. Nice lacing. Aroma: Lightly tart apricots, wild yeast funky hints. Taste: Pretty dense mouthfeel, moderate to above moderate tart and moderate sweet apricots. Apricot kernels. Very fruity. Subtle notes of wild yeast funk. Wood tannins. Smooth, pretty dry. Over medium body, below average carbonation. Great balance, nice complexity.

Shortlived off-white head over fully hazy ochre beer. Apricot/peach, and lots of yeast features. Peach and mainly apricot again, in a lot of lactic acid, quite sour. Acidburn and thinning, still medium bodied, and slick. Sour and bitter apricots?

Bottled, once at Gebrande Winning and once with Pilsnertest and Wickedestman. Hazy yellow, almost orange with a lasting beige head. Loads of jammy apricot on the nose. Bright, fruity with a touch of funk. Taste is not as fruity, some apricot mellowing out to a slightly bitter grassy funk. Very interesting complexity, if the taste would've been as bright this would be very close to a 5.

2018 vintage bottle at Ammutsøn, Vienna, bottled January 2019. Dark orange, medium hazy body, with a medium, creamy, light yellow head. Aroma of apricot jam, citrus, straw, moderate funk, wood, some apples, some peppery spices. Tastes similar, with slight vinegar. Medium, a bit oily, with an average carbonation. Finishes perfect, smooth, fruity, moderate sour, medium dry, a bit funky, wooden, with apricot jam, green apple, spices, some straw. Very tasty. Fresh, jammy apricots everywhere, while the Saison notes come through a bit more as the beer warms up. Drinks very smooth and balanced, a bit more on the sweet side, but with a great depth. Score: 8 / 4 / 8 / 5 / 17

Bottle shared at Foeders with Kermis, MarcoDL and others, thanks for sharing these guys! Hazy orange golden with white head. Soft funk, bitter herbs, sweet and sour apricots, light grass, spicy yeast, apple, quince, even some pear, earthy funk, soft alcohol, herbal spicy dry fruit peel. Medium sweet and bitter, over light sour. Over medium bodied. Good, but not great.

At brettfest. Aroma of apricot, tart, funk, dry yeast, horseblanket and oak. Taste of zesty apricot, oak, tart, funk, horseblanket, wheat and dry yeast. Very flavorful. Great.

Bottle shared at Foeders, Amsterdam. Fairly hazy golden with a white head. Aroma of dishwashing liquid, spicy yeast, citrus, light funk, apricot and tart light fruits. Flavour is light moderate sweet and moderate sour. Medium bodied with soft carbonation.

Apricot 'versnijbier' (Fantôme plus lambic, as usual with Bokke), 75 cl bottle from 2018 when the brand was still named Bokkereyder - the 'conservative old family brewery pettiness' demonstrated by the Cornelissen brewery in taking this wonderful project to court over a name dispute is beyond imagination, but anyway. Shared with my girlfriend at De Verzekering Tegen De Grote Dorst, one of no less than five Bokke beers available there at the time, incredibly. Snow white, mousy, papery lacing, opening and thinning head on a hazy warm apricot (sic) blonde beer with visible sparkling. Intense and pure apricot attacks the nostrils upon sniffing - blending in magically with the estery features of both the lambic and the saison, hinting at orange flesh, old dry lemon peel, sour grape, green rhubarb stems, field flowers, unripe pineapple, dry hay, peach kernels, green dandelion leaves and - quite prominently in the end when warming up - a perfumey, herbal accent most reminiscent of rosemary (or perhaps thyme), no doubt coming from the spicing in the Fantôme, but accentuated by the lambic and the apricot in a 'distorted' but very alluring way. Crisply sour onset, brimming with actual apricot till deep into the finish, with a refreshingly lemony acidic edge and also carrying a low profile sweetishness within; lively carb, lean wheaty-white bready base drenched in apricot fruitiness and tartness, with lovely yoghurty lactic sourness from the lambic and that herbal rosemary-like touch from the Fantôme returning in the end; bready crusty and tannic apricot kernel effects add further dryness, but that colourful, pale orangey apricot brightness remains till the very end. Comparing this with fresh Cantillon Fou' Foune seems stating the obvious, but this is altogether very different, if equally stunning: the Fantôme effect adds softness, breadiness and - most of all - a deeply perfumey, yet subtle herbal quality that matches seamlessly with the extremely generous apricot dosage. This is one of those gastronomical masterpieces delighting the senses, a fruit lambic in full-fledged virtuoso Bokke style and among the most enduring, magically enticing fruit beers I ever had. Worth the high price charged for it.

0,75l from bottle at Method Goat event at Gebrande Winning. 1&2y Fantome Saison. Bottled 01/2019. Yellow rather hazy color, small white head. Smells apricots, flowery, peppery, light vanilla, lovely lovely smell. Full body, soft carbonation, slick mouthfeel. Tastes of apricots, light vanilla, spices, peppery, stone fruits, light almonds. Finishes lightly dry and lightly sour with notes of apricots, vanilla and peppery notes. Very very nice one, great complexity, yet so smooth to drink 10, 4, 10, 5, 19
