The ‘basic’ beer by the Jacobs brothers, the ‘lambic’ so to speak upon which all the fruit and herb versions are based; 75 cl bottle shared by Meeki Meekio, thanks! Egg-white, loosely knit, open and eventually completely dissolving head, cloudy straw blonde robe with apricot tinge. Aroma of sour apples, green gooseberries, hint green tea, cava, sourdough, lemon rind, unripe pear, sour yoghurt, dry hay, grape skin. Crisp, sour onset, notably apple-like (sour apples and very dry cider), unripe blackberries and green grapes, fizzy carb but refined, smooth bready base underneath drying lactic and more crisply lemony sourness, light fruit peel astringency but very softly so, with the whole remaining supple and very ‘drinkable’; dry cava- or even ‘brut champagne’-like effects near the finish, rounding off with lingering green plum, sour grape and apple flavours, crisp and refreshing, with a remarkably herbal, almost green tea-like hop aroma, gentle woodiness and light earthiness. Only lambic-like in a superficial way, Antidoot has clearly created something new and different here, a new breed of ‘Limburgian lambic’ if you will – I have long wondered why spontaneous fermentation had to be limited to the Senne valley when I first took intellectual interest in beer, and these guys, along with several others in Scandinavia, the United States and other regions of the world, provide the answer: it does not have to. This generalization of spontaneous fermentation in beer only seems like the next logical step in the whole ‘emancipation’ movement the craft beer revolution basically is, and one can only begin to dream of the myriad of possibilities this can offer in the near future. This Woop Woop is a very elegant, highly drinkable and refreshing beverage, harbouring in itself the potential to develop a similar depth, complexity and variety as ‘true’ lambic from the larger Brussels area – no wonder it serves as the starting point of a string of highly interesting ‘wild’ beers.
