Sake-inspired + Seaweed + Sea Buckthorn + Yuzu + 2 Years in Barrels

A 2-year-old bourbon barrel-aged version of our sake-inspired beer brewed with Sea Buckthorn, Sea Salt, Sea Weed (Kombu + Hijiki) and Yuzu juice.

The result is a beautifully rounded, mature beer with superb character from its time in its barrels. Yadokai was originally a mass collaboration with Black Friars + Hanging Bat in Edinburgh, Nanban in London and ourselves. This symbiotic relationship was developed as a way of bringing the chefs, bars and breweries together to create something incredible.

This is an absolutely unique tasting and balanced beer brewed with Scottish and Japanese ingredients at our farmhouse brewery in Somerset! This version was set aside and racked into Bourbon barrels to develop micro - oxidation character over 2 years. It’s Yadokai the sequel, 2.0, and there’s a strong case to say it’s better than the original.

From tap. Pours cloudy yellow, small white head. Aroma is fruity, slight wineous. Sweet, slight phenolic. Alcohol burn. Toasted malt, slight marzipan note. Subdued bitter. Toasted and alcohol warming finish.

Tap@Taphouse, Copenhagen - golden orange coloured pour with a white head. Sweet fruity and malty with notes of caramel and fudge, some citrus fruity nuances, notes of wood, dried fruit, medium to full bodied, boozy warming finish.

Draught @ Mig & Ølsnedkeren. Pours slightly dark yellow with an offwhite head. Aroma of sweet malt, rice, little yeast, light wood, sweet fruit, little bourbon. Flavor is sweet, malty, rice, yeast, sweet fruit, light wood, bourbon, light boozy. Medium to full body, average carbonation, sweet finish with warming alcohol. 240318

Bottle share at Chriso's Pre-GBBF Shindig. 05/08/2017. Many thanks! A hazed golden orange coloured pour with no head. Aroma is solcent, harsh, boozy calvedous, apple, vanilla. Flavour is composed of apple wine, solvent, woody bark, oak and vanilla. Palate is tangy, solvent, highish carboantion. Frothy. Little harsh overall, might be better after a year.

Nice fizzy mediumlasting head. Aroma is dry sour-ish mineraly, oak, bark, sour grass, minerals, citrus peel, booze, hay. Taste is slightly dry sour-ish mineraly, oak, minerals, sour grass, bourbon, citrus, bark, fruit stones, butterscotch, citrus peel. Medium bitterness, slightly dry sour-ish mouthfeel. Fair enough.

The great pre GBBF bottleshare at ChrisO’s. Hazy gold beer, good pale cream colour head. Palate is smooth and semi dry, good fine carbonation. Sweet malts, smooth. Strong dessert wine fruits run all the way through. Some spice. Light finish. Nice.

Bottle shared at Chriso’s and Ruth pre GBBF shindig, August 5, 2017. Orange pour, quite flat. Nose is boozy, maybe some sea buckthorn coming through as well. Boozy, did I mention that? Taste is fruity, some sour things and bit of butter. Quite boozy still. Aftertaste is light, dry and lingering tannins . Overall interesting.

Bottle care of Kenny at ChrisO. It pours hazy golden with a tiny head. The aroma is sweet, sticky, gooseberry, vanilla, fruit pie, white grape, candy and hay. The taste is soft, sweet, lemon - lime, sherbety, gooseberry, sherbet and warming alcohol with a drying finish. Medium body and fine, prickly carbonation. Hot and tangy, but not in a bad way. Alright.

Bottle shared at Chris & Ruth’s pre-GBBF Shindig 2017 - Part 1. A slightly hazy orange golden beer, no head. Aroma of strong and riped fuits, wood, rum. Taste of strong riped fruits, rum, wood, boozy.
