A 2-year-old bourbon barrel-aged version of our sake-inspired beer brewed with Sea Buckthorn, Sea Salt, Sea Weed (Kombu + Hijiki) and Yuzu juice.
The result is a beautifully rounded, mature beer with superb character from its time in its barrels. Yadokai was originally a mass collaboration with Black Friars + Hanging Bat in Edinburgh, Nanban in London and ourselves. This symbiotic relationship was developed as a way of bringing the chefs, bars and breweries together to create something incredible.
This is an absolutely unique tasting and balanced beer brewed with Scottish and Japanese ingredients at our farmhouse brewery in Somerset! This version was set aside and racked into Bourbon barrels to develop micro - oxidation character over 2 years. It’s Yadokai the sequel, 2.0, and there’s a strong case to say it’s better than the original.

Bottle at home, 29/07/17, big thanks to James. Golden amber pour with a decent off white head. Nose is spice, Umami, sweet notes, caramel, spice, butterscotch. Taste comprises light spice, grass, light breads, seaweed, toffee, soured fruit rinds, sherry snifter, tarte fruit rinds. Medium bodied with bite, fine carbonation, semi drying close with a rising boost. Decent enough stuff ... drinks below the hefty ABV and is an interesting brewski.

Bottle. Beer Central, Sheffield. Opens with a big hiss. Hazy amber colour. Very animated, lasting, white head. I can hear the fizz in this beer from 2 feet away. Nose has bourbon. Brine. Gravy. Some wet leather. Taste is salty and light sweet. Some sourness. Heavy on the palate. Feels the full ABV. Salty, boozy finish. I really liked the base version of this. It was twangy and clean and bright. This has lost that cleanness, and has ended up a salty, boozy mess. With tons of fizz. Grim.

330ml bottle from the Brewery Online Shop. Shared with Ashton McCobb. Pours hazy golden amber with a short-lived thin white head. Aromas are massively woody. Tons of bourbon, vanilla and wood. Sweet caramel too. Base beer coming through a bit. Some of the buckthorn and sake notes. Light sherry vibe. Very interesting drink.

Bottle thanks to allmyvinyl. Appearance - deep orange to amber. Thin head that disappears quickly. Nose - loads of wood and vanilla. Big booze. Taste - canned oranges, floral. Vanilla and wood again. Palate - medium to full bodied with a tangy texture and a long dry tangy finish. Overall - it grew on me. The barrel was a bit much on the nose but added complexity on the palate. Very nice.
