As we push further in our development of beer/wine hybrids, the Oenobier series focuses on different varieties of wine grapes while drawing inspiration from the body and drinking experience of classic wines and champagnes. This series is informed by our past work with beers like Stroka, Bug Valley, Terroir Project: Rkatsiteli, and Oenobier's first iteration, which was created with our friends from Monkish.
The golden-skinned French Sémillon grape is regarded for its full-body, yet bright fresh-zested citrus and tropical fruit flavor. A primary grape in the dessert wine Sauternes, Sémillon was once one of the most planted grape varietals in the world.
Pouring an effervescent bright golden yellow, Oenobier: Sémillon presents aromas of fresh pear, lychee, and hand-zested lemon. As the beer opens up, a bouquet of floral notes wash over the palate. Deceptively easy-drinking for 10.8% ABV, Oenobier: Semillon finishes with a gentle acid profile and lively carbonation.

Bottle. Shared with SirAlex during Coronashare #25 pours hazy Golden with a small White head. White Wine, funk and sesame seeds. Bretty farmhouse notes. Dry finish. A bit dangerous as the alcohol is not really noticeable.

33cl bottle @ Ardes, thanks tiong! Poured light golden in color, fizzy, light head. White grapes, funky, light wood and peach. Awesome aroma. Dry finish. Really good.

355ml bottle. Tartish, funky and slightly fruity with some vinous grape juice, pear, nectarine and apricot, hints of sourness. Okay, quite balanced.

(Bottle, 0.33 l - brewed on 20.09.2018, thanks tiong, at Arde, 20210123) The beer poured golden and clear. Its head was medium sized and white. Aroma had fruitiness, tartness and floralness. Palate was medium bodied and dry with medium carbonation. Flavours were malts, tartness, wood, canned pear and bitterness. Aftertaste was tart and bitter. A delicious tart brew.

ABV: 10.8%. Cloudy medium yellow orange colour with a average, frothy - fizzy and quick, fair lacing, fully diminishing, white head. Aroma is moderate malty, wheat, light hoppy, moderate yeasty, leater, funk, grapes - white grapes, stone fruit, pear, grapes - wine - white wine - nature wine, oak. Flavor is moderate to heavy sweet and light acidic with a long duration, stone fruit, white grapes, funky, oak, grapes, sweet fruit - sweet grapes, pear, wine - nature wine, dry, dought - baking yeast notes. Body is medium, texture is oily to watery, carbonation is soft to lively (looks flat). [20210101]

Pours clear still gold into a tulip. Head crackles and recedes to nothing. Sweet grape, pear and apple aromas. Spritzy with white grape and underripe pear upfront turning to dry skin and peel in the lasting finish.
