As we push further in our development of beer/wine hybrids, the Oenobier series focuses on different varieties of wine grapes while drawing inspiration from the body and drinking experience of classic wines and champagnes. This series is informed by our past work with beers like Stroka, Bug Valley, Terroir Project: Rkatsiteli, and Oenobier's first iteration, which was created with our friends from Monkish.
The golden-skinned French Sémillon grape is regarded for its full-body, yet bright fresh-zested citrus and tropical fruit flavor. A primary grape in the dessert wine Sauternes, Sémillon was once one of the most planted grape varietals in the world.
Pouring an effervescent bright golden yellow, Oenobier: Sémillon presents aromas of fresh pear, lychee, and hand-zested lemon. As the beer opens up, a bouquet of floral notes wash over the palate. Deceptively easy-drinking for 10.8% ABV, Oenobier: Semillon finishes with a gentle acid profile and lively carbonation.

Bottle from Beerdome. Aroma is white/golden grape, grape skin, white wine, touch of pear, with a gorgeous grainy finish, including notes of wheat, dough. Flavour is tart, moderate to medium sour, even a little sweetness. Dry. Body is medium. Complex and frightfully drinkable at 10.8%.

Bottle drunk 6/28/24. Bronze-brass. White head quickly to ring. Oranges, vanilla, good mellowness and low alcohol. Rich honey and floral notes. In the mouth it's juicy, with bread and grape acidity. Soft, lightly tart and tons of orange and vanilla. Should be barrel aged but it's a strong stainless wild ale and the grapes are done tastefully. Not getting any booze.

bottle stamped 20/september/18 tasted april 1st, 2024 Behaved well when opened aroma is super funky wild ale with yeast and leather and wild notes. not much sourness. fairly mild aroma. flavor is malty, sour malty, yeasty, slightly peppery, fruity note that I can't really place. alc. is well hidden but the beer is warming. in a way it tastes somewhere in between a wild ale, a sour ale and a strong belgian ale.

Bottle ordered from Brew Cavern, Nottingham. Aroma is dry and vinous. Citrus. Clear apple juice gold. Essentially no head. Heavy sour. Citrus and vinous. Really rather tart. Underlying pulpy fruit come through into the finish. Light. Thin. Average-fizzy carbonation benefits it. Long very dry and astringent finish. Not to self: What is Semillon?

Bottle at Maakun’s, thanks! Clear golden with white head. Sour grains, massive grapes, a bit of wet popcorn, old bubblegum, oak, booze. Insanely strong sour at 10.8%, so different, yet familiar. Medium body and soft carb.

Bottle shared. Clear light golden with small white head. Almonds, spicy white grapes, dry oak, peppery grapes or maybe yeast? Light alcohol, bright citrus, a hint of smoke, tangerine peel. Solid medium sour, medium sweet. Medium bodied with fizzy carbonation, slight dry finish. OK, at least it doesn't taste like 11% abv.

0,33l bottle at Sanders place shared by Sander. Bottled 20.09.2018. orange murky color, small white head. smells funky, baby diaper, bit herbal, some grape notes, tannins, nice smell, quite funky. full body, light carbonation. tastes of tannins, grape notes, funky, cheesy, peppery, herbal, some wood. finishes dry and lightly sour with notes of grapes, cheese and some woody / herbal notes. good overall, but not entirely sure why this needs to be 10% ABV, body is way too heavy.
