A blend of 3 year old 100% spontaneously fermented beer with Texas grapefruit.
100% spontaneously fermented beer inspired by authentic Belgian Lambic & Gueuze. We chill the unfermented beer overnight in our coolship and allow native yeast to work its magic. A true reflection of Texas terroir.
On a cold winter night three years ago, we juiced and zested fresh grapefruit and added them to the coolship as it filled. We then let the beer slowly mature for three years before blending and bottle conditioning.

Bottle pour at the April DCBeer monthly gathering. Poured slightly hazy light orange color with a small white head. Aroma was pleasant grapefruit. Nice funky notes. Wish I had another one of these to see how it would develop.

Keg at Hop Locker #3. Vinous aroma. Grapefruit and vinegar. Pungent. Pale amber. Thin translucent white head. Heavy sour. Citrus vinous. Light-medium bodied. Slick. Flat carbonation. Long dry astringent finish. Really does dry the mouth out. Pretty nice for something that I suspect could strip paint.

Keg at HL3, 05/09/19. Almost clear golden with an off white cap that dissipates to a swirl. Nose is musty wood, funk, damp straw, citric zest, pissy knickers, grandads shed, wet cloth. Taste comprises damp alleyway, lemon drizzle, subtle grapefruit zest, base funk, barnyard esters, acidic tickle, hay bales, dry rot. Medium bodied, fine carbonation, drying close with balanced acidity. Solid flavoured lambic ... the grapefruit is well pitched and not OTT.

Draught @ MBCC '19 [ Red Session ]. - Mikkeller Beer Copenhagen Celebration 2019, Øksnehallen, Halmtorvet 11, 1700 København V, Danmark.[ As Jester King SPON Grapefruit ].Unclear medium yellow colour with a small average, frothy, good lacing, mostly lasting, white head. Aroma is moderate malty, fruity malt, wheat, grapefruit, moderate yeasty, fruity yeast, funky, wood - oaky. Flavor is moderate sweet and light acidic with a long duration, tart, grapefruit, funky, leather, citric, light wood - oak, dry. Body is medium, texture is oily to watery, carbonation is soft.
