The Mistress is inspired by the strong and dark baltic porters that, for centuries, has been brewed and consumed by people around the Baltic Sea. Among them the inhabitants of the island where our brewery is.

Brewed traditionally with a mix of domesticated and wild yeast and then put to rest in freshly emptied bourbon barrels for a full four years.

Black with small tan head. Strong aroma of molasses, PX sherry, sweet tobacco, scorched raisins with light smoke. Viscous mouthfeel and low carbonation with flavors dominated by raisin, prune, dark chocolate, hints of vanilla, red wine, and umami. Ends with a lingering sweetness, roasted bitterness and warming alcohol

Bottled. Black with a small off-white head. Roasted aroma with lots of liquorice some chocolate and spice. Sweetish, rich and round roasted flavour with liquorice and chocolate, sweet cherry and prunes. Complex and big, while still very drinkable

Sample at MBCC2019, Copenhagen. Colour is very dark brown with small brownish head. Aromas and flavours: Coffee, dark chocolate, some cognag and roasted malts. OK.

MBCC. Very dark brown with small beige head. Aroma is roasted malt, chocolate, barrel, cognac and dark fruit. Flavour is roasted malt, chocolate, barrel, citric, little sour, warming and medium bitter.

[5/11/2019] Draught sample at Mikkeller Beer Celebration Copenhagen 2019. Green session. Black, brown foam. Cognac, vinous, vanilla, chocolate, sweet, dark fruits, full-bodied. Great.

Draught @ MBCC '19 [ Blue Session ]. - Mikkeller Beer Copenhagen Celebration 2019, Øksnehallen, Halmtorvet 11, 1700 København V, Danmark.[ As Penyllan The Mistress Cognac ].Clear dark black brown colour with a average, frothy - creamy, good lacing, mostly lasting, light brown head. Aroma is moderate to heavy malty, roasted, chocolate, dark malt, wood, sweet malt, alcohol - cognac, raisin - ripe fruit. Flavor is moderate sweet with a long duration, chocolate, sweet malt, dark malt, cognac - sweet alcohol, raisin - ripe dark fruit, vinous, oak - vanilla.
