Two antique apple varieties that held places of great esteem in 19th century settler apple culture. The rich, fruit leather character of the Baldwin apple is held in balance with the zesty acid of Golden Russets. We harvested the apples from the tall, century-old trees at the Schoolhouse Orchard, Old Orchard Farm, Avondale Farm and the Brackett Orchard on Pender Island. The apples were pressed on a rack-and-cloth press, fermented by native yeasts and aged for one year. Each bottle then underwent a second in-bottle fermentation for natural fizz.

Good light gold body with stormy carbonation and nice foam, chewy apple on the nose slightly vinous, green skin, tannins galore, modest sweetness. Slight wild honey notes. Flavour is slightly bitter, sweet wine vinegar, sharp apple. Lively carbonation keeps it real. Enjoyable.
