In early September the hops we grow on our little field, in the village of Chelsworth, become ready for picking. The hop oils and aromas are all around you when handpicking in the September sunshine, so we decided to brew a beer to let these fresh green hops shine as well. Only our organically grown Suffolk hops and barley malt were used in the brew. The beer was primary fermented with a Saison yeast strain and then a secondary fermentation, in oak barrels, with our own locally collected wild yeast. The resulting beer is dry with mouth coating of hop oils and pepper, orchard fruit flavours are at the fore with more funky spice from the yeast on the finish.

Bottle split at L42, thanks to Danny, 14/06/17. Light haze on a golden pour with a decent off white head. Nose ispissy citric shreds, light funk, yeast esters, grains. Taste comprises mellow citric peel, on the turn melon, funk, spice, grassy, apple core, grains. Medium bodied, fine carbonation, semi drying close with a mellow tarte rinse. Ok saison.

Bottle at L42. It pours lightly hazy yellow - gold with a thick white head. The aroma is. The aroma is earthy, musty, funky, pear, apple, melon, icing sugar and candy. The taste is crisp, tart, tangy, lemon, sugary, sherbet, earthy, apple, pear, spice, booze, straw and earth with a drying finish. Medium body and moderate, foamy carbonation. Solid stuff.
