Trøffeler is our debut collaboration with Denmark’s To Øl collective. Teaming up to make a Barrel-Age Saison made from a base of white spring Tuscany Truffles and Sage. Ithas been blended in Sauterne casks to add a sweet characteristic while still letting the yeast funk up the beer. We used foraged truffles from the Alba in Northern Italy, continuing our linage in using only the finest ingredients in our beers.
Based on our shared passion for pushing borders and using untraditional mixes of ingredients to make new and interesting takes on existing styles, this collaboration is uses a philosophy of balanced playfulness!

C: clear gold, small ivory head falls quickly
N: yeasty, lightly floral, faintly grainy, lightly sour
P: light to med bodied, soapy, yeasty, lightly sour, light floral touch, tad watery finish.

Old rating - A 330ml bottle from Love Wine in Jersey. Pours a bright amber with a white foamy head. Aromas & tastes of funk, sharp truffle notes, earthy character, touches of sour. Excellent collaboration.

Bottle. Pours hazy straw with airy white head. Clear, dry aroma with estery touches. Bitter and dry flavour with dusty notes and spicy and herbal touches. Lingering, dry aftertaste with salty, funky touches. Well-balanced and quite enjoyable.

Bottle, 5.5%. Quite citric aroma, hints of vomit and some caramellised sugar. Almost clear golden colour. Big white head, fairly stable. The flavour is quite citric with a clean lactic finish. Flavourful and complex, but the acid reminds me of Berliner Weisse.

Backlog August 2019. Unclear pale golden body under a dense white head. Unusually aroma combination of citric fruit, sage, grapes, herbs and acidity. Taste is a bit more conventional Sasion than aroma, mostly fruity, peppery sasion yeast, some acidity but the herbs and sage is still in the background. Unusually and refreshing, like it when getting used to it.

bottiglia 33 cl, schiuma bianca media grana evanescente, colore giallo smorto velato, al naso lievito legno pepe spezie funky aceto, in bocca spezie funky vinosa e leggero salvia, corpo leggero, carbonazione forte, amaro moderato. 33cl bottle from Abeervinum, Rimini, Italy. Pours hazy, pale gold, with abundant white foam while pouring, them quickly fading. Aroma is vegetal, barn. Body is aberrante, also in carbonation. Taste is medium sour, maybe also a little bitter. Final is fairly long and sour.

Bottle at home. Gusher. Pours a slightly hazy straw colour with a small off-white head that fades fast. Aroma of hay, white wine vinegar, pepper, wheat and sage. Flavour of sage, pepper, anise, wheat and some white wine vinegar. Has a slick and sparkly mouth feel, medium body and a light bitterness. Interesting. Saison with a spicy and sour touch.
