On May 8th, to celebrate International Women’s Day we participated in Pink Boots Collab Day. Brewed by the women of House of Funk, this grisette was named after the region which inspired us: Wallonia.
We aged Wallonia in one of our oak foeders after blending with barrels also intended for Diana (our brett saison brewed in the memory of its namesake). The acidity and funk from Diana's reserve gives a roundness to Wallonia and highlights aromas from double dry hopping with the fourth annual Pink Boots Blend: Cashmere, Ahtanum, Citra, Loral and Sabro. Expect a light, refreshing and slightly tart grisette with herbal and peppery saison character, and notes of tropical fruit, lemon and grass.

On tap at the Alibi Room, pours a hazy golden with a small white head. Aroma is buggy, with oak, wild yeast, and some rustic saison yeast. Flavour is earthy, rustic and buggy, with rustic saison yeast, lots of bugs, and oak. Nice complexity to the yeast; buggy, oaky finish. Solid.

Okay modest gold body with some minimal foam. Smells of nice lemon, soft hops and yeast dominate. Taste is good yeast, more lemon hints, foeder character comes through well. Yeast and grain linger nicely with the foeder. Rustic and funky, not bad.
