A wildly fermented, barrel aged cider, made from untreated and handpicked local apples from high standard trees, blended with some wine we made from Pinot Noir, Regent, Leon Millot and Cabernet Jura grapes. The apples were picked at the idyllic collection orchard of Belgian pomologist and friend Dirk.

Pale pink head, fast gone over deep cardinal-red beer. Vinous, raspberry, cherry, other red fruit, hints at various acids. Apples, strange enough, arrive later, and as dried apples. Pretty sour, if not exaggeratedly, taste, going towards astringency; again ultra-dry, applejuice with all the sugars removed. Acidity however retreats gradually, just leaving the dryness and moving to somewhat more classical ciderflavours. Lipsmacking acidity, light body if pretty slick, feels somehow carbonated enough whilst looking perfectly still. Great cider, but! The same remark as your colleague from Bofkont: I'm really getting tired of this repressive attitude to sales. Leave it to your customers to judge whom they sell to, they know better than you!

Flaska från Antidoot. Flaskad 2021-04. Röd, lite rostfärgad med vit krona. Bäriga, vinösa toner med mörka druvor, mycket jordgubb, mjöliga äpplen, fat, mineral. Mjuk och fin kropp, lagom funk och stallighet. Fyllig. Mer vinlik än flera av deras andra hybrider, drar åt ett lättdrucket, fruktigt rödvin (flörtar nästan med ett Susucaru Rosso). Den högre alkoholen känns inte direkt av annat än en subtil, tjusig värme i utandningen. Mycket snygg.

EB from earlier this week. Paired with gazpacho sorbet, basil emulsion and smoked apple jelly. Needs some time for both the cider and food to warm up slightly. Then it’s a match made in heaven! Crazy stuff on its own too. Amazing funk, depth & complexity.
