ビアスタイルは、Foreign Extra Stout。起源をたどると1801年のアイルランド、もともとは海外輸出向けに作られたスタイルです。船での長旅による劣化を避けるため、普通のStoutよりアルコール度数を高めに設定し、防腐剤の役割もあるホップも多めに使用されています。 アルコール度数は7.5%、しっかりとした飲みごたえの仕上がりです。
ふんだんに使用した麦芽に加えて、三温糖と乳糖を投入。さらに、メープルシュガーを隠し味に忍ばせています。そのうえで、ヘビーローストしたオークチップを漬け込み、木の香りを重ねました。
では、なぜウッドチップ(オークチップ)を使用するのか。 今でこそ、衛生面と効率性の観点から、醸造タンクの大部分がステンレスタンクに取って代わられてしまいましたが、もともとお酒というものは、ビールに限らず木樽で仕込まれてきました。日本酒には杉樽が、ワインやビールではオーク樽が使われてきたのがその代表的な事例でしょう。 そんな古い時代に作られていたビールのニュアンスを、僕たちはウッドチップを加えることで再現を試みています。 このForeign Extra Stoutが生み出された時代、ビールは木樽に詰められて世界中に運ばれていました。長期の熟成期間を取ったことも含め、このビールにロマンを感じていただけると、とても嬉しいです。
口に含めば、焦がしたカラメルのフレバーに、芳醇な甘さ、焙煎した麦芽からの僅かな酸が感じられます。喉を通ると、甘さが包んでいた苦みが余韻として残るとともに、ほのかに木の香りが鼻から抜けていきます。温度が上がるにつれ、甘みが強く感じられるようになるとともに、隠し味に忍ばせていたメープルのフレバーが顔を出し始めます。
The beer style is Foreign Extra Stout. First brewed in 1801, Foreign Extra Stout was designed for export, and was more heavily hopped than usual Stout, and had higher alcohol content, which gave it a more bitter taste. The extra hops were intended as a natural preservative for the long journeys the beer would take by ship. This time, in addition to malt used abundantly, add brown sugar, lactose and maple sugar. On top of that, heavily roasted oak chips were soaked in. So why we use wood chips? At the time of this beer brewed in 1801, beer was kegged in wooden barrels and shipped all over the world. We hope you can feel same atmosphere and experience the history through this beer.

750 ml bottle, 3-4 years old. Shiny black with a tall, tan head. Nose is chocolate, grapes, berries, low level of roasted malt. Sweet up front, fruity, dark chocolate, vanilla, roasty finish. A bit too sweet, but nicely fruity and decent.

Description and wax make it sound more exciting than Otis. Well-made stout, but one of the adjuncts really appear

pitch black color. Medium brown head. Nice maple, molasses and dark chocolate character, not that roasty. Maple, dark chocolate, some roasted malt character, cookies and dark fruit. Medium Full body, low bitterness. Low carbonation. Rounded. Pretty nice
