We aged this blend of wild-fermented heritage North American varieties in American oak barrels previously used to age red wine. The result is a full-bodied, very dry cider reminiscent of the robust, barrel-aged ciders of yesteryear.

Poured from 750mL bottle (2020 harvest). Hazy blonde. Vinous notes, gentle oak, earthy apple. Best of the flight.

Medium gold body and some modest foam. Amazing yeast funk aroma, like brett with a bit of red wine and wood, sweet apple to bind it. Taste is deep red wine melded with sweet apple, lingering wood notes, champagne carbonation to keep it lively. All sorts of excellent here.
