This is a collaboration between Brasserie Fantôme and Ölpölen. It’s a farmhouse ale brewed with spices. And that’s all we share. Because "Un fantôme ne révélera jamais des secrets”. Nor do Ölpölen. À votre santé!

Bottle. Color: Lightly hazy orange amber, off-white head. Aroma: Malty, yeasty, herbal, fruity hints. Taste: Herbal, spicy notes of pepper and pine tree, yeasty, caramel malt, grainy notes, fruity notes of apple, citrus peel and hints of apricot. Light sweetness, over moderate bitterness. Very lightly tart. More bitterness at finish. Dry-ish mouthfeel. Medium body, average carbonation. Nice one.

Fantôme saison variant with – of course, I would almost say – added spicing, made with and for Ölpölen, a Swedish podcast about beer. From a 75 cl bottle with cork and crown cap, shared with Craftmember. Egg-white, moussy, medium thick, opening, lacing head on a hazy peach blonde beer with ‘dirty’ ochre-ish tinge. Aroma indeed very herbal, reminiscent of yarrow, ground ivy, sweet cicely, spiced cookies, dandelion leaves, allspice, red apple, dried orange peel, ripe banana, coriander seed, moss, egg yolk, apricot, soggy sweet bread, cloves. Estery, fruity onset, sweet with a light sourish edge, some unfermented sugars, impressions of banana and ripe peach with a dash of sweet apple, very herbal from the start; fizzy carb, soft fluffy body, a nice brioche-bready and cake-doughy malt core penetrated by a heavy amount of ethereal spicing, with coriander and clove returning under a wave of what seems to be yarrow, ginger, sweet cicely and even water mint, all bittered by floral hops but also by the spicing itself, which at this degree turns a bit astringent in the finish, probably also in combination with the alcohol. The fact that the creators refuse to disclose which spices and herbs went in here is annoying enough by itself – the fact that they overdid it, probably even more so, though that cake-like sweetness and soft mouthfeel did make up for a lot. Benefit of the doubt – but certainly a point off for not telling me what went in here, though in the case of Fantôme, I can easily imagine that they simply took whatever they could find from the garden and surrounding neighbourhood and are unable to reproduce the exact composition of what they gathered…
