750ml bottle. Tart, funky and sourish with hints of berries, blackcurrant and earthiness, some farmyardy notes. Okay.

Another one emerging in bottled and refermented form from the depths of Tilquin's experimental fruit lambic series: elderberry lambic, still a rather rare phenomenon, in spite of the abundance of this plant species in Belgium. Audibly crackling, moussy, pale lilac head, medium thick upon pouring but opening quickly and eventually fizzing away almost completely, though the high effervescence of the beer remains visible on the surface and in the hazy, blood-red coloured liquid with dark purple hue itself. Aroma of real ripe elderberries and strongly so, including a 'dark green' elderberry leaf element, dusty bookshelves, halfripe blue plum, old red lambrusco, dry forest floor and autumn leaves fit for the time of the year, wild apples, grass silage, moist plant seeds, wet jute rope, cold rosehip tea, clear Bretty 'horseblanket', hay, red wine vinegar. Crisp onset, lactic sourness mingling with natural elderberry acidity but not in an overly puckering way, lots of wild berry and wild apple effects, unripe stonefruit astringency, some ripe elderberry juiciness as well bringing balance - with a kind of herbal quality to it which indeed typifies the fruit. Strong effervescence as said, cava-like, adding minerality and extra sourness to a bready core soaked in astringent elderberry seeds and skins, with that juiciness continuing in equal strength; sweaty and funky Brettanomyces notes grace the finish, aligned with drying old wood tannins and persisting lactic sourness. Ends bone dry, softly bitter from the berry skins, ever so slightly 'meaty' (as usual when elderberry or -blossom is involved), a tad earthy and herbal, with this almost tea-like quality of the berries coming forward; the lambic character remains well in balance with the fruit character, so this is not just a fruit showcase, but a showcase of skilled lambic blending as well, like most other bottled Tilquin fruit lambics. Noble, complex, a bit 'foresty' in a genuine and earthy way, while still juicy and undeniably permeated with convincing, 'real' elderberry flavour, a flavour I vividly remember from childhood when I picked the berries from the bushes to eat them. Conveys the character of elderberry very well - better so than in other elderberry lambics I had, but as stated in the beginning of my review, there are not many of those around to say the least. Another great addition to Tilquin's ever-expanding realm of deeply solid fruit lambics.

Cloudy purple with a small white head. Soured purple grape and some funk. Soured grape, petrol funk with a decent finish.

Flaska från SB, 20 - 21. Mörk lilaröd med rosaröd krona. Ordentligt stram och sträv, mycket tanniner/bärstjälkar, dämpar syran något som ändå är där. Fläderbären ger en bärighet lite som från björnbär och mörka druvor. Dova smaker, ligger djupt ner, lite murrigt. Något svårdrucken om än inte nödvändigtvis på ett dåligt sätt. Öppnar upp sig i glaset efter en stund. I slutänden är det ändå väldigt bra, om än lite mer krävande.

Sampled at Brassigaume 2021. A almost clear pinkish red beer with a purple head. Aroma of tart red fruits, red wine, brett. Taste of dry sour red berries, red wine, oak, brett.

Bouteille 75cl partagée avec Vincent et Adrien, Tilquin Open Beer Days 2021.
Belle couleur acajou quais pourpre, col fin crémeux blanc-cassé, rosé oscillant sur le bordeaux.
Arôme est frais et bien fruité, sureau avec un léger côté fleuri. Nez complexe avec l’assemblage des divers lambics qui procure des effluves fines sur l'acidité et léger citrique.
Palais est complexe, superbement bien fruitée avec un rendu succulent du sureau. Ces baies donnent un fruité généreux et frais sur un petit rappel de mûre et avec une amertume marquée. Acidité fine des lambics perce en retrait, je note un léger côté citrique qui se prête à une belle effervescence et pétillance avec un retour fin des malts/céréales.
Solide version - à voir comment cela évoluera avec le temps où le fruit risque de s'estomper un petit peu au profit du caractère plus lambic.
