We brewed the base beer Gotlandsdricka using Hill Country well water, smoked malted barley, oak smoked wheat, and flaked rye. Juniper berries and myrica gale were added at the boil. Then, let this ferment in our stainless-steel tank with our mixed culture of native yeasts and bacteria, then transferred it to rest in Old Tom Gin barrels from Ransom Spirits.

Very interesting. Cloudy gold pour. Strong whiff of gin & juniper. Some funky yeast and fruit and honey.

Smoke and some light juniper berry. I thought the gin barrel would have been much stronger here but this was pretty well balanced and nice. Some lavender. Pours clear golden with ok head. Flowery sweet end. Tap at Sovereign.

From backlog. Draught @ Mikkeller Baghaven. Funky sour, woody and slightly smoky with some juniper and tart citrusy notes. Interesting.

Tap. Hazy orange color with white head. Aroma is peach, smoke, herbal, fresh yeast. Taste is herbal, peach, tart, smoked. Oily mouthfeel with medium carbonation. Interesting!

On tap at Jester King, pours a cloudy peachy orange with a small white head. Aroma is intense, with tons of gin, juniper berries and a touch of smoke. Flavour is complex, with lots of gin barrels, wood, light smoke, and floral notes. Really nice barrel aging. Not usually a fan of gin barrel aged beers, but this is a beauty.

[5/16/16] Bottle at Himmeriget in Copenhagen. Hazy golden. Aroma of gin, wood, smokiness, juniper, fruitiness. Sour flavor, fruity, woody, with fruitiness, some smokiness, juniper, a bit of gin. Medium-bodied. Very nice.
