We carefully selected barrels of stout from our cellar and blended them together to capture a singular moment in time. Eternal Rest is a combination of Russian Imperial Stout aged for 19 months in Armagnac Barrels and Imperial Stout aged 25 months in Bourbon Barrels. The blend was then conditioned on top of fresh vanilla beans and toasted coconut. Cheers to new beginnings and endless horizons.

Bottle shared at Belgian Winter Gathering ‘19. Dark brown with a beige head. Aroma of oak, coconut, vanilla, chocolate, dark roast and coffee. Flavour is heavy sweet and above moderate bitter. Full bodied with alcohol warmth in the finish and soft carbonation.

Vanilla and toasted coconut 'impy' aged parly on armagnac barrels and partly on bourbon barrels - a beast of a stout, the kind that made this brewery famous, many thanks to Luis for sharing the bottle. Thick, large-bubbled, irregular, pale beige, opening head; black robe with thin burgundy edges. Intense nose of toffee, soy sauce, coffee grounds, black chocolate, elderberry syrup, bourbon, faded vanilla but lots of vanilla-ish oak, brambleberry jam, beef broth, toasted nuts but not necessarily coconuts - though a tropical coconut accent is still there. Intense onset, sweet candied dates, raisins, baked banana, sourish roasted grains undertone, soft carb, very thick and viscous, oily mouthfeel, thin soy sauce-like umami edge; full toffeeish, hazelnutty and chocolatey dark maltiness, dried red fruit accent somewhere, soft cappuccino-like end bitterness, warming brandy- and indeed (more) bourbon-like alcohol while the nuttiness remains huge. Excessively thick nuttiness overwhelms whatever faded exotic vanilla and coconut notes there were last year when this beer was still young. A huge beer indeed, too bad the added flavourings have faded since I love both vanilla and coconut in this type of beers, but remaining utterly solid and massive, as is to be expected from a 14% ABV stout.

Bottle from a trade. Many thanks Palme! Dark brown colour, thin layer of brown foam. Nose of coffee, lots of roasted malts, heavy armagnac, some bourbon, very light coconut. Not easy to drink, rich and boozy. Bit raw and ashy.

Bottle. Pours opaque black, small beige head, dissipates leaving nice residual and lacing. Aroma is deep roasty bourbon, vanilla, cocoa, toffee, more vanilla. Flavor is fairly sweet, light plus bitter, heavy bourbon and mocha, vanilla prominent, perhaps a hint of coconut, but likely only because I know its there. Full body, creamy mouthfeel. Quite nice.

Bottle, 13 months after bottling. Pours pitch black, with a small creamy, mocha head. Aroma is sweet, roasted malts, with coffee, tobacco and wooden barrels, as well as muscovado and dark fruits. Full, creamy body, with soft carbonation. Flavour is sweet, dark roasted malts, with liquorice, muscovado and coffee, as well as tobacco, rum raisins and coconut.

Aroma is dark chocolate syrup vanilla coffee beans roast. Simple but amazing. Taste is sweet chocolate with dark spritty malt. Perfect balanced bittersweetness and spicyness. Fullest bodied. Amazing. Happy birthday, Bryan!

Bottle. Pitch black color with beige head. Aroma is vanilla, chocolate, coconut, armagnac booze, caramel. Taste is vanilla, armagnac booze, coconut in the back. Surprisingly light for 14%. Very long aftertaste, very complex. Great stuff!

From 330 ml bottle thanks to Ioannis!! Black color with beige head. Malty aroma, caramel, alcohol, dark dried fruits, licorice, chocolate, wood. Heavy sweet and light bitter taste. Medium oily body with soft carbonation.
