We carefully selected barrels of stout from our cellar and blended them together to capture a singular moment in time. Eternal Rest is a combination of Russian Imperial Stout aged for 19 months in Armagnac Barrels and Imperial Stout aged 25 months in Bourbon Barrels. The blend was then conditioned on top of fresh vanilla beans and toasted coconut. Cheers to new beginnings and endless horizons.

Waxed bottle from Bine & Vine. Pours very dark brown with a slight dark tan had. Aroma is very toasted coconut. Notes of "brandy" and vanilla. Med + body. Flavor is chocolate "brandy", toasted coconut, bourbon/vanilla, and almost something like smoke. Heat is not really noticeable. Far from dry. Far from bitter. Excellent.

Score: 9 / 4 / 9 / 4 / 17 330 ml bottle from Etre Gourmet, bottled 23.02.17 Black, oily body, with tiny, dissipating, coffee-colored head. Dense, complex aroma of bourbon, wood, melting dark chocolate, coconut, vanilla, almond, sweet spices, coffee, dark fruits, sherry, subtle booze. Taste is as amazing, also very complex, with similar sweet, wooden, roasty, fruity notes, but also subtle leather and tobacco, still not that much booze. Medium, oily mouhfeel, with a moderate carbonation. Finishes warm, medium sweet, moderate roasty, a bit dry, wooden, with dark fruits, bourbon, chocolate, coconut, sweet spices, some tobacco, lovely lingering barrel notes. Delicious, complex stuff! The balance is outstanding, there is some booze, but really not as much as the ABV suggests, doesn't drink too heavy. More on the sweet side, while there is enough underlying dry roastiness and there is so much going on. Outstanding example of a barrel aged Imperial Stout, where the barrel isn't an overwhelming gimmick, but improves the base beer. Another bottle 2021-04-18: mostly barrel notes, especially Armanac, and dark malts, really smooth. Not boozy at all.

24.10.2017: 0,33l bottle at home. Bottled 23.02.2017. black color, very small coffee colored head. smells boozy, I assume armanagc, bourbon, earthy, light smoky, some dark fruits, berry notes, light blueberries, cinnamon, vanilla, light coconut. very lovely smell, especially after it warms up a bit. full body, no carbonation, slick moutfheel. tastes of dried fruits, lots of wood, bourbon, armanagc again?, some cinnamon, light vanilla, spices, chocolate, bit earthy. finishes lightly sweet with notes of barrels, cinnamon and vanilla. very nice complexity, very smooth to drink. love the cinnamon / vanilla notes, beer works very good with some dark chocolate. overall great stuff. 9, 4, 8, 4, 18 Rerate 18.04.2021: 0.33l bottle at home shared by Saeglopur, big thanks. Bottle at the brewery. Pitch black body with a dense beige head. Strong aroma of dark malt, molasses, coffee, leather, liquorice and vanilla with smooth warming alcohol. Amazing strong and complex aroma, pretty perfect for an Imperial Stout with more of everything without becoming unbalanced or just silly. Flavor lives up to the aroma, lots of strong, sweet, dark malt, mild roasted, coffee, dark chocolate, liquorice, vanilla, coconut, balanced bitterness, complex wood and warming alcohol. Perfect balanced body and really long lasting aftertaste. Very nice indeed, very good balance, have all the qualities for a Dark Horizon, but seems to be smoother and less sharp on the alcohol at an earlier stage. Still room for some aging qualities here I believe. Amazing and impressive but probably nothing for the fainted juice drinker.
