We found it a bit fitting to dedicate this beer to the passing of Stephen Hawking. Big Thoughts noble DIPA is an experiment in perception challenging our ideas of what beer "style" really means. Brewed entirely with Pilsner malt and then hopped abundantly in the kettle with Celeia and Columbus oil, and then dry hopped to the outer limits with Czech Saaz and Hallertaur Hersbrucker (noble hops), and dosed with our house ale yeast blend. A wallop of grassy pink starburst and fruit punch in the nose, with abundant lemon grass, hay, and herbal spice in the flavor. This is one cool beer for ingredient dorks like us.
