Our Pommeau is made from locally grown traditional bittersweet cider apples, which are hand harvested and ‘sweated’ at cool temperatures. After the apples have sweetened , the fresh-pressed juice is fermented and aged with apple eau de vie. Our Pommeau is then matured in French oak barrels for one year. The result is a tremendously complex apple Pommeau that blossoms with aromas of fresh-pressed cider, dried fruit, and wood. This bottle will improve with cellaring for up to 20 years.

Waxed, corked 375 from Total Wine in Folsom, CA. Pours clear amber with a few bubbles. Aroma is dryish, winey with touches of wood and cinnamon. Med body. It is not dry, but not close to sticky. There is heat! Flavor is a bit cinnamon apple with wood and wine. In the finish appleskin stands out. Quite toothsome.

Lovely bottle, red wax dipped. Pours a clear yellow hue with sticky legs. A big boozy apple nose. Very smooth, not super hot, apples, bursting flavors, but not as sweet as Quebec ice ciders. Some tannins. Very nice.

Bottle at share. Mildly murky golden, noe head. Aroma greets you with a blast of alcohol. Then apples, flavor too, but the alcohol obliterates anything else. reminds me of German apfelkorn (schnapps).

Pours clear golden, no head or lacing. Apples and pear. Sweet apples, cinnamon, woody and pear
Smooth for 19% but not real good.

Tall skinny bottle pours out a crisp golden, nose is sweet apple big booze notes. Tastes is more of the big sweet apple and big booze.
