Raphael Mettler became acquainted with these two breweries at „The Festival“ in Portland, Massachusetts. As we work in similar product ranges, we found many things to be enthusiastic about. And so a joint beer brewing project was born, the idea being to brew a beer based on an identical recipe but brewed in three different places. In October 2013, we made the first brew in Austin, Texas, the second one in April in Denver, Colorado and finally the third one at the Brasserie Trois Dames on the 6th of May 2014. Each brewery was provided with vino fino barrels from Jerez de la Frontera which were practically 70 to 80 years old. The vino fino is a wine fermented « sur lie », characteristically oxydized. We wanted to replicate this profile. The beer will age for 6 to 12 months. At the Brasserie Trois Dames we used a seasonal-type yeast for the main fermentation and we added active lactobacillis yeast for barrel fermentation. This yeast comes from the Fromagerie Tyrode in L’Auberson. We also added a Lambic beer base from Oud Beersel. The Swiss version of the beer is due to come out in the spring of 2015.

330mL bottle, pours a murky dark orange with almost no head. Nose is odd, with funky brett, chestnuts, and some vinegary notes. Flavour is weird, with notes of funky brett, toasted chestnuts, and some garbage juice. Not a total disaster, but this is definitely messed up. Flat carbonation that doesn't help. Not good.

Poured from a 375 ml bottle. Aroma is really interesting with a nice lambic, mustiness to it. Moderate oak notes with some vinous grape character. A medium light earthy, herbal note. Light acidity with hints of citrus. Pours a hazy, copper red with a small, thin, forced slightly off-white head that lingers on the edges for a bit. No lacing or legs. Flavor had a medium light acidity with some light citrus notes. Light malt presence with moderate oak notes. Light grape and wine notes with light tannins. Some light cherry and berry notes. Light herbal and earthy funk. Mouthfeel is medium light bodied with no carbonation and somewhat watery. Low astringency and low alcohol warmth. Overall, the aroma on this beer is killer but the flavor falls a bit flat and the mouthfeel is very much lacking. The flavor isn?t quite there either with oak and acidity being the two most prevalent notes.

Draft @ Mikropolis, Copenhagen. Pours a hazy orange amber color with a small off-white head. Has a fruity spicy sour wort aroma. Fruity weak sour yeasty bready wort flavor. Has a fruity weak sour yeasty wort finish.

Draught @ Mikropolis. Pours hazy burnt golden with a small creamy offwhite head that slowly dissipates while leaving some thick lacing on the glass. Smell is slightly malty, slightly fruity and slightly funky with caramel, sourdough bread, lemon juice, persimmon, cherries, white raisins, hay, dry soil, minerals, moist wood, barnyard, peach skins, lemon zest and hints of yoghurt. Taste is tiny sweet, sour, slightly malty, fruity and slightly funky. Mouthfeel is slightly dry, tart, slightly mouthpuckering and light to medium bodied. Finish is sour with sourdough crackers, crispbread, lemon juice, sherry, hay, dry soil, minerals, barnyard, moist wood, leather and lemon zest. Quite precious actually with tons of subtle and complex smells and flavours combining onto a delicious beer. Barrel is there but isn’t overwhelming. Taste is sweet, tiny sour, malty, tiny fruity and tiny funky. Mouthfeel is round, tiny tart and medium bodied. Finish is sweet and tiny sour with sourdough bread, cereal, unfermented wort, lemon juice, dry sherry, hay, minerals, barnyard and lemon zest. This one isn’t done fermenting. Smells and tastes a lot of unfermented wort. Hard to compare to the others really. Hopefully they’ll try again and make sure it’s done fermenting when they release it.

[4/30/15] Draught at Mikropolis in Copenhagen. Cloudy orange. Aroma of wine, caramel, some wood, some fruitiness and candy notes. Sweetish-sourish flavor with wine, candy, fruitiness and mild funk. Medium-bodied.

Tap. Hazy dark amber with small off-white head. Aroma is malt, yeast, phenols, caramel and baking yeast. Flavour is malt, caramel, fruit, phenols, baking yeast, yeast, medium sweet and a little sour.

Pours hazy deep golden with a white head. Aroma has notes of malt, tartness, apricot, citrus, barnyard, brett and funky. Taste is medium sweet and medium sour with a long dry, tart, fruity and funky finish. Body is medium, texture is oily, carbonation is soft.

Pours slightly hazy amber with a off-white head. Aroma has notes of malt, popcorn, sour, funk and butterscotch. Taste is medium sweet and light to medium sour with a long slightly dry, sour, popcorn and butterscotch finish. Body is medium, texture is thin to oily, carbonation is soft. Keg at Mikropolis. Clear amber with off white head. Lightly funky aroma with some heavy yeastiness to it. Same in taste. Light vinegary and some barnyard. Maybe a little bit burnt plastic.
