Barrel-Aged + Blended + Special Edition 2018

This beer started life as an English Old Ale, which is aged in Red Wine and Bourbon barrels and blended together to become 'Modus Operandi'.
To go "Beyond" we have put an exceptional blend of Modus Operandi into a mixture of some very special and unique barrels from our barrel library!

This year the story of Beyond Modus comes from the wood. The barrels that have aged this blend had recently held Bourbon, Islay Whisky, Red Wine and Pedro Ximenez. The combination of characters; tart berries, raisins, sour cherries, vanilla richness, smoky peat and vinous notes make a magnificently complex blend.
What we have is a bit of a detour from previous versions, softer, richer with a delicate sweetness and intoxicating acidity. It’s a red beer of huge character; demanding to be shared! This is an expression of what we do and why we do it; taking some of the best beer we produce, from our best barrels, for the autumn season.

Draft. A dark brown beer with a lazing beige head. The aroma has notes of vinegar, wood, and berries. The flavor is sour with notes of vinegar, wood, and berries, leading to a tart finish.

Bottle. Don’t recall where from. Very dark, cola brown. Fine, lasting, dark beige head. Nose has savoury smoke. New leather. Booze steeped cherry. Red wine vinegar. Fresh balsamic. Taste is tart, dry, and vinegary. Medium body. Oily on the palate. Low carbonation. Smoke and vinegar on the finish. Found this really hard work.

Tap at Wild Beer, Bristol. Dark brown with a ring tan head. Aroma of balsamic vinegar, chocolate, cocoa. Flavour is above moderate sweet and sour. Medium bodied with soft carbonation.

Keg at BD TH, 06/12/18. Murky mahogany brown with a decent beige covering. Nose carries a big balsamic exhaust, wood must, varnish, acidic nostril tickle, pissy citric shreds, varnish. Taste carries a big acidic rip, pickled dried fruits, varnish layer, sharp citric bite, acetic, decaying wine barrel, fucked over red grapes, tarte berry fruits. Medium bodied with bite, fine carbonation, drying close with a big olde acidic bite. Ok sour but a touch overcooked on the acidity front ... needs to tone down.

On keg at Brewdog Lothian Rd, Edinburgh. Appearance - deep brown to black with decent lacing. Nose - soft, smoky and chocolate. Taste - burnt bread and liquorice. Palate - medium bodied at least. Smoky and creamy middle and finish. Overall - gorgeous liquorice finish this one.

Keg at BD Union Square. It pours deep brown with a small beige head. The aroma is perfumed, oak, plenty of vanilla, dull toasted coconut, red wine, vinous, oily, cacao nibs, sticky and jammy red fruits. The taste is dry, tart, vinous, oaky upfront, leather, bright acidic kick, sherbet, tart red berry, cranberry, grape, cherry, sherbet, sour candy, oily with a puckering finale. Medium body and moderate, prickly carbonation. Good depth of flavour. Oaky, fruity and vinous. Classy sippin ale.

Wow, incredibly complex. Almost horseradish flavor, mixing with red fruits and a great tartness. Remarkably well-balanced.

Keg at the hanging bat... Deep brown... Thin tan lacing.. Soft earthy funk red wine nose... Earthy woody Malts.. Dark sweet red wine... Heavy funk wood red wine

Keg at the hanging bat. Pours deep hazy ruby, nose is funky, raisin, oak, blackberry, taste is funky, tart, juicy fruit, vinegar, tasty.
