Barrel-Aged + Blended + Special Edition 2018

This beer started life as an English Old Ale, which is aged in Red Wine and Bourbon barrels and blended together to become 'Modus Operandi'.
To go "Beyond" we have put an exceptional blend of Modus Operandi into a mixture of some very special and unique barrels from our barrel library!

This year the story of Beyond Modus comes from the wood. The barrels that have aged this blend had recently held Bourbon, Islay Whisky, Red Wine and Pedro Ximenez. The combination of characters; tart berries, raisins, sour cherries, vanilla richness, smoky peat and vinous notes make a magnificently complex blend.
What we have is a bit of a detour from previous versions, softer, richer with a delicate sweetness and intoxicating acidity. It’s a red beer of huge character; demanding to be shared! This is an expression of what we do and why we do it; taking some of the best beer we produce, from our best barrels, for the autumn season.

Tap at Beergeek. Quite lots of glue, fusel alcohols, acetic acid. Not as much as to completely ruin it, but enough to make it really ungood unfortunately. Hard to make any further points, sorry.

Tap at Ace&Kees. Hazy dark brown with beige head. Lots of oak, balsamico, soft smoke, sour cherries, vanilla, blackberries, sour red wine, more oak and toasted wood. Solid medium sour, medium sweet and bitter. Bit over medium bodied.

Bottle from the brewery online shop. Pours clear dark brown with a thin off-white head. Aromas of oak, chocolate, smoke, red fruit. Taste is sour, woody, smoky, liquorice, red fruit. Tangy sour finish.

Tap. Black. Oak, caramel, sour. Berries, vanilla. Amazingly complex and vinous. Hint of smoke.

(Draught at In De Wildeman, Amsterdam, 15 Feb 2019) Dark brown colour, almost black, with big frothy beige head. Malty, sourish nose with notes of balsamic vinegar, caramel and oak wood. Tart, malty taste with caramel, oak wood, vinegar, tart berries, chocolate, woody tannins and a mild roasty bitterness in a tart finish. Medium body, with a certain sweetness. Tart, woody and really tasty. Very nice.

A dark brown ale with a thin lacing mocha head. In aroma, sweet caramel malt with loads of dark fruits, plums, woody notes, Brett, light chocolate, super complex. In mouth, a nice sweet fruity malt with loads of dark fruits, ground cherries, lactic acid, bourbon barrel notes, peated and complex. On tap at Lupulus.

4th April 2019 Craft Islington. Keg. Opaque dark brown beer, small but tidy pale tan head. Palate is fairly light and minerally crisp. Very rich red wine dominates a light islay smoke. Bourbon? Tastes like peat whiskey to me! A Duchess Du Bourgogne tangy light sourness. Nice. Very drinkable, such rich fruity red wine carries this a long way.

On tap at Lajbah, Ljubljana. Pours almost pitch black, topped without any real head, just a tiny beige cover. Strong vinegar soury nose, vinous with some roasted maltiness. Strong vinegar character in taste as well, moderate sourness. Soem sweetness with chocolate and fruitiness to follow. Strong sour, but nice one actually.
