Barrel-Aged + Blended + Special Edition 2018

This beer started life as an English Old Ale, which is aged in Red Wine and Bourbon barrels and blended together to become 'Modus Operandi'.
To go "Beyond" we have put an exceptional blend of Modus Operandi into a mixture of some very special and unique barrels from our barrel library!

This year the story of Beyond Modus comes from the wood. The barrels that have aged this blend had recently held Bourbon, Islay Whisky, Red Wine and Pedro Ximenez. The combination of characters; tart berries, raisins, sour cherries, vanilla richness, smoky peat and vinous notes make a magnificently complex blend.
What we have is a bit of a detour from previous versions, softer, richer with a delicate sweetness and intoxicating acidity. It’s a red beer of huge character; demanding to be shared! This is an expression of what we do and why we do it; taking some of the best beer we produce, from our best barrels, for the autumn season.

Medium brown with a bit of haze. Thin head. The aroma is kicking off some bandaid-smoke phenol character. On the palate, it's got a bit lactic, acetic note, smoke becoming a clearly dominant phenol. There's still a bit of malt sweetness, and good underlying fruitiness that I'm pretty sure is the wine barrel. It comes together fairly well, actually. Unique and interesting character.

Vintage 2018. Pours very deep red with light foamy head. Slightly musty aroma with notes of cherry. Tart and tannic. Bright red wine flavour with dark sour cherry. Smoky notes complement very well. Fast carbonation in the mouth; not too harsh. Very enjoyable.

Poured from 750mL bottle (2018 vintage). Dark brown with huge beige head. Very peaty, mild red wine vinous notes, fairly tart, quite unique and enjoyable.

2018 vintage. 750mL bottle, pours a deep dark brown/near-black with a small tan head. Aroma has some charred, smoky bourbon, some tart red wine, and a hint of wild yeast. Flavour has a lot of smoky bourbon, gentle red wine, and dry bready caramel malt. Really nice smoky bourbon that combines well with the tartness, which I assume is only from the red wine barrels. Meaty, thick palate, with slightly above carbonation. This is really nice.

750ml bottle, from Wild Beer Co, Wapping Wharf, split at Brewdog Bristol bottleshare. Pours opaque dark brown with a beige-tan head. Aroma: balsamic vinegar, dark berries, oak, peat. Quite savoury. Taste: moderate+ tartness, dry, more balsamic & peat smoke, sour cherry, red wine hints. Medium body with low-ish carbonation. Intriguing flavours, I can see why not everyone likes this one.

Bottle sample at a tasting at Yoav's place. Reddish brown. Acetone, phenols, fruitiness, caramel, sour, peat smokiness, a bit sweet, some vinegar, some wine, a bit salty, a bit of alcohol. Very interesting.

750ml bottle – Pours a dark brown colour with an average sized mostly lasting tan head. The aroma is balsamic vinegar, berries, wood and peat. A moderately sweet and sour taste, balsamic vinegar, red wine, tart berries, wood and peated whisky notes with a tart finish. Very nice.

Tap at BeerGeek with Gurthnar. Dark brown body, not much of a head. Huge peaty, malty aroma, light tomato touches, caramel and... fennel? Complex, odd. Sweet peach, maltiness, light tomato, some apple, interesting fruity - malty profile, ending with acetic acid burn. A highly interesting blend of peaty and acetic notes, nice!
