A crisp and dry French-style saison brewed with rye, wheat, spelt, and hallertau blanc for added complexity, spiciness, and fruit character. Aromas of pear, black pepper, spice, with light notes of tropical fruit and white wine grapes. Keg conditioned for a soft, bright carbonation.

Cloudy yellow body with okay foam. Really nice banana and cereal grain aroma, soft pepper. Taste is smooth sugary grain, very soft funk. Ends full and smooth, but seems a little too thick. The grain should be accented more, but still, it wasn't bad at all.

On tap at The Bakery, pours a hazy golden with a small white head. Aroma has got some rustic saison yeast, a touch of oak, some bugs, and a bit of white wine (from the Hallertau I guess). Flavour reveals those white wine notes upfront, followed by rustic saison yeast, some wild bugs, and earthy grainy notes. Cohesive and complex. I love that white wine character. An experiment that worked well.
