This beer is collaboration between Dogfish Head, Stone Brewing Co. (Escondido, CA) and Victory Brewing Company (Downingtown, PA).
The idea for this beer germinated way back in 2003 when the three guys (Sam from Dogfish, Greg from Stone and Bill from Victory) formed the BUFF alliance (Brewers United for Freedom of Flavor) - a noble endeavor with the goal to highlight the passion and camaraderie of the American craft brew movement.
So, BUFF didn't really do anything (beyond talk a lot of talk) until 2010 when the three brewers finally got together to jointly brew at beer at the Stone Brewery. Saison du BUFF was first brewed at Stone and then replicated at each of the other two breweries - same recipe, same ingredients, three different breweries throughout 2010. The brewers have a repeat performance planned for 2012!

12oz bottle pours a lightly hazy, golden yellow with a frothy, white head. Nose surprises you with how much rosemary there is, the sage is also way out front along with an herbaceous citrus note that’s probably a cross between the parsley and the hops. The herbal aroma is the entire nose, and it’s so fresh smelling that you don’t know how they did it. I’m not even sure how to rate the nose because it doesn’t even smell like beer, it smells like the herb garden out back. Flavor is sweet, sugary, Belgian candy sugars, herbs, sage is the biggest here, very light citrus. It tastes like a rosemary shortbread cookie. Buttery. Medium bodied, lightly bitter, lightly medicinal on the end. It’s good, I can say that definitely, but it’s very strange.

Poured from 12 oz bottle, enjoyed while watching the first Bears game of the year! This is some awesome stuff, I’m not really a fan of Saisons, but this is great. Aroma of spices, light Belgian yeast, and citrus hops. Appearance is a cloudy yellow with a pronounced head. Taste of the parsley, sage, rosemary and thyme spices, along with a nice malt / hop balance. Very light in flavor and smooth. Great stuff!

Pours pale gold into a tulip. Bright conglomerate white head with medium retention recedes leaving spot lacing to coat surface. Summer flower and spice with a hint of lemon aromas. Crisp with upfront sweet honey turning to rosemary in the lasting bitter saaz-like finish.

On tap at city beer. Pours golden with slight orange. White head clings to the glass and collars the beer. Spices are overwhelming on the nose but blend nicely. Well rounded mouthfeel with yeast and coating. The thyme stands out from the other flavors and leaves a nice long finish.

Dogfish head bottle. Pours clear yellow gold with big white head. Nose of banana, lemon, sage and rosemary. Taste of rosemary, sage, spice, banana, clove and lemon zest.

Bottle from Wine Warehouse, Charlottesville. Pours a bubbly golden with an inch of foamy head. Aroma of dirt, herbs, and pine. Interesting flavor... herby, with a slight fruitiness in the middle, followed by a drying nuttiness.

12 ounce bottle from Once Upon a Vine in Richmond, VA. Pours a clear golden color with a medium white head. Fair head retention and lacing. Aroma of huge spice notes, primarily rosemary and sage, along with some citrus. The taste is bitter herbal notes, including thyme, parsley and sage, as well as tart citrus and a bit of a nutty note. Medium bodied.

Draft at Dogfish Alehouse, Falls Church. Still not much of a saison fan, but after having the first version of this, I was stoked to try this. Pour was almost non-existent head with a slightly hazy light-orange/dark-yellow color. Aroma was slightly hoppy, spices. Flavor was outstanding, good hop flavor, good balance of spices, can really taste the rosemary.
