To make it, the HM crew uses barley, oats, rye, and wheat, for flavors of bread crust and biscuit. Then, they add hints of lemongrass and a touch of funky complexity by fermenting and aging it in an oak Foeder. Finally, they bottle condition the brew with brettanomyces yeast for effervescent carbonation and subtle, grassy aromas.

A little funky, very crisp, and incredibly refreshing!

750 ml bottle into tulip glass, no bottle dating. Pours slightly hazy pale golden straw color with a 1-2 finger fairly dense and fluffy white head with good retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings around the glass, with a moderate amount of streaming carbonation retaining the cap. Aromas of big tart lemon, lime, orange zest, white wine, pineapple, peach, papaya, mango, peppercorn, hay, straw, floral, grass, oak, musty funk, wheat, cracker, bread, light spicy rye, and yeast earthiness. Fantastic aromas with awesome complexity and balance of fruity/spicy/funky yeast, oak, and moderate pale malt notes; with great strength. Taste of big tart lemon, lime, orange zest, white wine, pineapple, peach, papaya, mango, peppercorn, hay, straw, floral, grass, oak, musty funk, wheat, cracker, bread, light spicy rye, and yeast earthiness. Good amount of yeast spiciness and a fair amount of fruity/tannic tartness on the finish; with lingering notes of tart lemon, lime, orange zest, white wine, pineapple, peach, papaya, mango, peppercorn, hay, straw, floral, grass, oak, musty funk, wheat, cracker, and yeast earthiness on the finish for a good bit. Incredible complexity, robustness, and balance of fruity/spicy/funky yeast, oak, and moderate pale malt flavors; with a great malt/tart/spiciness balance, and zero astringent flavors after the finish. Medium-high carbonation and light-medium body; with a very smooth, crisp, dry, and fairly acidic/creamy/grainy balanced mouthfeel that is awesome. Zero warming alcohol as expected of 4.7%. Overall this is an amazing Brett saison! All around incredible complexity, robustness, and balance of fruity/spicy/funky yeast, oak, and moderate pale malt flavors; very smooth, crisp, and refreshing to drink. A highly enjoyable offering.

Bottle at Right Proper clear pale yellow color, white head with solid lacing. Nice aroma of funk and dust. Taste is funky lemony hay and straw. Very nice.

About a year old keg on draft for anniversary party at brewery. Something was absolutely wrong with this but it only seemed to bother me. Some compound that I must sensitive to bur it was all phenolicy or something weird. I couldn’t drink it at all.

At the Belgrade-Serbia tasting on 31/10/2015. Bottle courtesy of luttonm, grazie bello mio! Pours hazy yellow bright color, huge and long lasting white foam. Nose: very grainy, cereals, some bread crumb, also balanced funky notes. Nice. Mouth: wheat notes, funky a bit, sweet cellar notes of white wine must, some creamy feel, citric nice finish.

Bottle at RBSG Grand Tasting. Pours a hazy gold with small white head. The aroma is funk, cheese, oak. Medium mouth, funky, oak, lemon, nice tartness, very nice.

On tap at Holy Mountain, pours a hazy golden yellow with a small white head. Aroma brings out Belgian yeast, though not a lot resembling brett. Flavour is rather soapy, with Belgian yeast and earthy notes. Not very thrilling - it's rather muffled and not complex at all. Not getting any brett here. Not too special.

Draft - Banana and fruity esters and some funk, Clea gold with a decent white head. Grassy bitterness, pepper and some citrus notes. A little astringent but OK.
