A traditional farmhouse style saison brewed with honey from a local KY beekeeper. Crisp dry and complex, most character comes from esters and phenolic compounds produced by the yeast. We brewed this same batch at Turtleback ridge and inoculated it with wild cultures present at their farm. That process is time consuming, requiring patience and blending, therefore we are calling that beer “The Tortoise.” We will have both beers on tap in the late fall so that you can compare and contrast The Tortoise and The Hare.

Banana, apple, clove, malt, yeast, and hay aroma. Hazy golden yellow with moderate white head. Very sweet banana, orange, apple, clove, malt, and mildly bitter hay flavor. Good body. Very nice - like a Hefeweizen/Saison hybrid.
