American Pale Ale style beer … almost. In fact, we have introduced some significant style variations including the addition of wheat malt which helps to release a collection of extraordinary fragrances that no one ever would expect from a beer of only 4.2 volumes. This Beer is also characterized by a very persistent foam which allows the aromas to develop in complete tranquility to be enjoyed along with the slightly tart freshness as green apples which is the imprint feature. Also in this beer the hops, Americans, are used wisely and not to violate the palate.
This Beer, like any other of our products, it is not filtered and neither pasteurized but follows a patient clarification process at low temperatures which allows the sedimentation and the consequent removal of the biomass produced by the fermentation.
The second fermentation takes place in the bottle and produces the typical carbonation. For this beer will observe the extraordinary persistence of the foam that will not leave you during the tasting.
Recommended for a drink around 7 degrees and also suitable for fish dishes.

0.33l bottle from globus in basel. pours a murky pale amber with a steady white head. aroma of fruity, floral, grassy and citrusy hops. flavour of grass, green apples, spruce, a hint of wheat and yeast. dry medium bitter finish.

330ml bottle shared @Johnny’s Off License (Rome). Pours pale yellow with a medium white head. Aroma is grassy, grapefruit and fresh fruits. Flavour is quite balanced, medium to light malt profile with a good bitter end. Light body, medium carbonation. Easy and drinkable.

Bottle courtesy of anstei. Hazy orange color with big white head. Aroma is grassy hops with some mango, a hint of a wheatiness including bananas and grainy. Green apples? With fantasy. Also has a bit of a Belgian yeast feeling. Smells like a Belgian Blonde with some extra hops and less sweetness for me. Taste is honey and hints of vanilla, wheat, straw, and grassy hops. Silky mouthfeel from the wheat. Semi-dry bitter finish. Medium carbonation. I like the way Sottobisio brings a nice silky mouthfeel together with a great and subtle carbonation, although it’s sometimes at the cost of having wheat where wheat does not completely fit in. An easy sipper which is interestingly confusing for a Swiss brew - A dry Belgian Pale Ale is probably the best way to describe it. It has a little bit of a Saison touch, which I like.

Tap at Erzbierschof Zurich. A light and simple but tasty PA. Sessionable but not watery, with good hops. Nice!
