This cider started with pressing handpicked and locally harvested apples from old varieties. The juice was fermented spontaneously for several weeks. Once fermentation ceased, it was macerated on Pinot Gris skins and fresh nettle leaves.

EB from last weekends Pellicle Vergistingen dinner. Solid dry cider with light funk and a very intriguing peppery herbal character. Nice!
