Full Circle is a 5 month red wine barrel aged cider from locally harvested apples. Fermented completely spontaneous with at least 30% Pomme d’Or, a bitter variety that gives depth and backbone. The remaining 70% is a mixture of at least 10 varieties expressing acidity, minerality and fruitiness. It has not bottle refermented yet but due to its lack of CO2 , small residual sweetness and barrel notes, it has a lot of vinous characteristics.
