Nijlpaard began its journey as a mixed-culture beer in red wine barrels. After a while, we liked it, but wanted to take the beer in a different direction - so on to second-use apricots it went. More time and some dry-hopping later, and we finish with a decadent fruit-forward beer with a tangy bite and aromatic freshness from Citra, Wai-iti, Southern Passion and Styrian Goulding hops.

Hazy blond colour. Nice aroma, plenty of bugs. Sour, quite aggressive, but also funky, a bit fruity, vinous, very bold. Good.

A taster shared with Alex (f@ck you COVID). Appearance: hazy blonde with a white head. Aroma: very nice funk and barrels, with a touch of acidity, maybe a bit of the nail polisher. Taste: acid kick, after getting used to it pretty nice barrel, finishes with acetone. Overall: too acidic for me, but otherwise it is great.

Cloudy coppery gold body and okay foam. Rough and rustic acidic funk on the nose, quite nice, intense. Taste is huge lemon, citrus notes, gueuze hints and a woody lemon zest finish. This is getting a lot of things very right.

On tap at Dageraad, pours a hazy dark golden with a medium white head. Aroma brings out wild yeast, moderate acidity, and tart apricots. Flavour is quite prominent on the apricots given that they're second use -- there's a nice funkiness to this, moderate-to-high acetic notes, and a nice wild yeast character. Nice fruitiness to this that melds well with the funk. Not amazing but it's certainly well-brewed.
